Roasted chickpeas - have I done it wrong?

I was quite excited about making them after seeing them on Masterchef Australia (best show ever IMO) and I followed an online recipe. Some of them are a bit soft and some of them are completely crunchy and brittle. I put a little bit of soy sauce on them when they were hot to season but not enough to make them soggy. But they don’t taste of much and the texture is ok but nothing to write home about. I’m very disappointed! Did I do it wrong? I thought they’d at least taste of chickpeas!

Oh I used dried chickpeas that had been soaked overnight, would tinned ones be better perhaps?

Did you boil them first, before roasting? Without seeing the recipe it's difficult to guess what went wrong, but i would roast either tinned chickpeas, or soak overnight, boil until cooked, and then roast them. I guess if they were cooked in lots of liquid in the oven, they would cook, but then they wouldn't be roasted. To me, roasting is a fairly dry process.

No I didn’t boil them first... I think I probably should have. I only glanced at the recipe to see how much oil and how long to cook them

If you didn't boil them/cook them first, then I'm not sure how safe they are to eat.

Depends how you did them in the oven, but they do need to be cooked before eating.

I've used tinned.
Jack Monroe recipe more or less.
It was good.
I'm not very confident at soaking/boiling pulses.

I use the tinned ones and after roasting I put honey and smoked paprika and salt on them.

I thought that was kidney beans that were dangerous if not cooked.

Chickpeas I think would be ok, though a little, er, 'tough' on the digestive system. Grin

I don’t think they are dangerous uncooked, but certainly would be fairly unpleasant. Tinned, home cooked or from a jar though and they are delicious roasted.

As an aside, BIL cooked egg fried rice for SIL on their first date. He too thought that the frying was the only cooking needed. It didn’t kill her though and he is now a decent cook. Grin

I've used tinned but I wouldn't do it again because of the faff it took to pat them totally dry first (the recipe was most insistent about this). They were delicious though, so if anyone has an easier method, please let me know!

I made them at lunchtime and I’ve been eating a few on and off ever since... I’ve probably had the equivalent of 50-75 grams of dried chickpeas, not sure how much they would weigh soaked

I just used tinned, on oil lined tin. Shake them up half way through. I really like them with paprika and chilli flakes

I always used tinned, dried take a day or two of soaking to get the best out of plus boiling and I'm rarely planning so far ahead.

Hummus is made from cooked chick peas.

Yes they havent been cooked. They need to be cooked first. One of my favourite snacks!

Update - no ill effects yet, I seem to be immune to raw chickpeas thank goodness!

I will definitely cook them next time, it seems completely obvious now
