Dish for event with many requirements

Hi, I need ideas for a dish to take to a training event. We're all bringing some food or drink, which should help us all get to know each other. I'm quite a competent cook but can't think of any ideas, can you suggest anything?

  • It needs be be easy to carry (I'll be travelling on the bus).
  • I need to make it on a Wednesday night for the Friday, as I'm very busy on the Thursday and won't have time to cook. So it needs to keep well.
  • I want to make it vegetarian as more than half of the attendees are veggie.
  • There are various allergies to consider: tomatoes, mushroom and gluten.

Fire away!

Make homemade Onion Bhajis which are Gluten free. Serve with a homemade raita.

And also some homemade Spring rolls, also gluten free. Serve with a bottle of Blue Dragon sweet chilli sauce as that's gluten free too.

Put in tupperwares when cooled with kitchen roll between and pour the dips out into small dipping bowls when you're there.

Hi! I just thought I'd give everyone an updated. I took: roasted sweet potato wedges with a lime and chilli butter glaze (no dairy allergies in the group). Feta cheese in a separate container. Roasted courgettes in a miso glaze. Roasted nuts in rosemary, sugar and salt butter (no but allergies either but I put them in a separate container just in case). It all went down very well!

It sounds as though you went to a lot of effort so it's really nice that your food was enjoyed.

It all sounds good but I think the sweet potato wedges are the first idea I'm going to steal Smile

Surely it's not usual for every dish to meet every requirement? You'd have some vege, some without mushroom/tomato and some gluten free rather than try and put a whole spread on that meets everyone's requirements.
