Give me your favourite veg prep ideas...

Because as a family we really need to eat more of it! We seem to be stuck in a bit of a rut with broccoli, carrots, peas, and the occasional courgette or handful of green beans over and over.

Apart from the obvious carrots, peppers etc what is nice raw? DD and DS2 both prefer crunchy textures.

I've been trying to find some inspiration for different ways of prepping and cooking but nothing is really catching my eye, so I'd love some tried and tested favourites!

Can you maybe make a tomato sauce loaded with veg that you wouldn't otherwise eat. Jamie Oliver does a 7 veg tomato sauce. Handy to have some frozen veg for this. Have it a couple of times a week with pasta (& mascarpone added) or chicken & rice.

Celery, cucumber nice raw.

If you get a spiraliser you'll probably suddenly want to try spiralising loads of different things, that might be fun for a while.

Grated apple and carrot is really nice in salad.

We eat tinned sweetcorn hot (microwaved) on it's own or with a punch of salt just as a snack quite often.

Yarden hummous is particularly nice, many many strips of different veg are dunked in that in our house.

Sugar snaps are a favourite.

I often lightly stir fry random veg so it's tasty but syill crunchy. I do a clove of garlic for a min first to flavor the oil, then onion, carrot, broccoli, tinned sweetcorn, frozen peas, peppers, mushrooms, whatever else is hanging about the kitchen. Dash of soy sauce.

Chopped onion and cucumber is nice in yoghurt with a curry.

Cucumber or red pepper on toast with hummous or soft cheese.

Try olives, cornichons, feta cheese in salads to liven them up a bit.

My favourite salad dressing is olive oil, lime juice, soy sauce and dijon mustard.

Butternut squash is lush in so many things - we often have roasted butternut squash in a chicken risotto, but I also like it mixed with garlic philly with pork strips or whizzed into a sauce.

DS loves miso soup with noodles, pak choi, broccoli, sweet pepper, sugar snap peas/ mangetout, or baby corn in it.

Sugar snaps! DD loved them when she was little, will definitely start getting those again. Baby corn might be a nice change from 'normal' sweetcorn too.
Loving the sound of red pepper on toast with cream cheese as well, I might even do that for lunch.

I roasted broccoli the other day with olive oil, garlic and chilli...it was so much nicer than steamed/boiled.

Winter coleslaw is yum. Keep in fridge with dressing separate and it lasts days.

We sometimes just have thinly sliced white cabbage in balsamic dressing - with pizza, or pasta dishes.

Or fry whatever veg you have with sliced onions, coconut cream, curry powder and serve with rice and daal.

Somehow I'd never considered roasting broccoli before, will definitely give that a go! And I firmly believe that garlic improves everything Grin
