What do you have for lunch? Ideas needed please

For those of you who eat lunch (I anticipate a fair few "I don't eat lunch posts 🙄), what do you have?

I'm stuck in a total rut with lunch. I'm veggie but not a massive salad fan. I have to be in the mood for salad. I'm not keen on sandwiches (unless they are made with a baguette) or crackers either. In fact I think I've lost my appetite when it comes to lunch. I just grab tea and toast ie a repeat of breakfast.

I sometimes like a bagel with spicy cheese and vegan mayo (I don't do eggs 🤢) and maybe some lentil curl crisps. Or red pepper hummus with baguette. Or a toasted muffin but that's basically toast. Sometimes I'll put veggie ham on it though.

I need help! And more fruit and veg in my diet. I'm at home so do have time to make something.

Moat days homemade soup, this week its sweet potato and carrot and a bagel with cream cheese and ham. Obvs you wouldn't want the ham but maybe cream cheese and cucumber?

Or jacket potato with cheese and beans or tuna mayo

I'm boring, I have the same everyday Monday to Friday, grated cheese and tomato sandwich.

Today I had veggie finger (like fish fingers) in sandwich thins with melted cheese. Yesterday I had tofu, roasted butternut squash and cold grains. Good food do pre pepped frozen butternut squash and sweet potato that is great to shove in the oven and have with pasta, grains or salad leaves.

I eat a lot of eggs so that's not helpful to you.

Baked potato... The frozen ones take 5mins in the microwave and are nice and fluffy in the middle.

Soup, I sometimes make a big pot at the start of the week lasts a few days. Aldi sweet potato soup mix, is 85p and really nice.

Leftovers from dinners like pasta, chilli, or roasted veg.

Previous nights leftovers (usually make enough so that there's some left) or buy a load of the 3 for £7 etc ready meals at the beginning of the week (macaroni cheese/lasagne/cottage pie sort of thing).

Homemade soup too. We cook up a batch on the weekend from whatever veg is left from the veg box mainly. I have with some cheese and crackers. Sometimes beans and toast and a sandwich on a friday. In the summer it's mostly salads.

I usually have leftovers. This week I’m lucky because my mum made a giant curry at the weekend and sent me home with enough of it to feed me for 3 lunches. When that runs out I’ll make a batch of veggie spag bol and have that for lunch!

Leftovers from dinner
roasted veg with lentils and balsamic vinegar
baked potato and some kind of filling
Cous cous with roasted peppers, cucumber, sun-dried tomatoes and pesto mixed through with feta

I agreed though - lunch is tricky!

I tend to have hummus and roast vegetable wraps, or pesto and roast vegetables
Toast and nut butter with banana(or blueberries)
Chickpea tuna
Buddha bowl with rice, roasted chickpeas and roasted vegetables.
Leftovers
Quesadillas www.bbc.co.uk/food/recipes/quesadilla_84511 though sometimes I use a tin of retried beans instead as I can just spread that straight onto the tortilla and put some red onion and cheese on top.
Homemade Soup usually minestrone because it's so easy.
Tofu scramble with toast
Sesame noodles www.nigella.com/recipes/sesame-peanut-noodles
Spinach and ricotta tortellini with peas, garlic butter and lemon. (Or pasta sauce)
Baked potato with vegetable chilli/cheese and beans/
Vegetable hash(various types depending on what I have in)

I'm not vegetarian but don't tend to eat a lot of meat for lunch, except the odd bit of ham or leftovers.

Soup - so, so many options.
Jacket potato, with beans/cheese/coleslaw (vegan mayo for you)/egg mayo/etc
Wraps - a change from sandwiches
Pasta salads
Quiche
Olives, oatcakes, hummus, crudités, cheese.
Bulgar wheat with roasted vegetables and feta cheese
Cous cous with the above

Tortilla chips and dip
Indian selection (onion bhaji, samosas, etc)
Vegetable/mixed bean chilli and rice
Lentil dhal with rice/naan/chippati
Chana masala with rice etc

What about rolls, pitta breads, flatbreads? Toasted sandwiches? I know you said you're keen on normal sandwiches but toasted sandwich are in league of their own in my opinion Grin

I'm a fan of ainsley Harriott instant soups, especially the goan spiced chicken and thai chicken ones.

I eat a lot of fresh spinach leaves but I guess that's salad. I might take a tin of anchovies and a mini pot of vinegar in, slice some red pepper into the spinach and then mix the lot at lunchtime.

I have leftovers from the night befores tea. So some reheated curry or spag bol, or leftover sausages with salad.
