Meals for busy evenings / multiple times

Hello, I need some inspiration, one more slow cooker stew and I'll cry.
What can I cook for busy evenings with activities where we eat at different times? I've got a reasonable amount of time to prep beforehand, and am a decent enough cook.

I like a tray bake. I always prep a chicken thigh tray bake on a Sunday night ready for Monday to bung in the oven.

I hate slow cooker food, but a gammon or a chicken in the slow cooker isn't that bad. French stick, salad and a chicken ready to eat when you come in is a nice midweek meal.

I used to cook a large pork shoulder on a Sunday then use the leftovers to make a hog roast one night (rolls, apple sauce, salad, frozen sweet potato fries, and a stir fry another (rice cooker keeps the rice warm)

Cous cous ? It’s a boiled kettle and stock cube away! Add herbs/cooked chicken/tuna/roasted veg.

Why not batch cook your regular meals and freeze so you can reheat.

Jacket potatoes

Wraps. Prep the salad veg and cook the main (halloumi in our house, but could be chicken) when you want to eat. Takes seconds.

There's nothing wrong with beans on toast, or eggs on toast sometimes.

Make a bug soup pot. I'm loving pumpkin and sage at the minute.

Make a quiche?

This has gone down a storm in our hideously difficult to feed household. They all hate anything out of the slow cooker but this is a hit!

I also make a tray bake one evening, chicken thighs trimmed, tin of butter beans drained, baby potatoes, cherry tomatoes, half a kallo chicken stock cube, basil, garlic, salt and pepper. Stick it in the oven for an hour or so at 200 or two hours at 170 ish.

Salmon, new potatoes and something green takes half an hour.

Lentil curry is quick with very little prep.

Chicken egg fried rice - just make the rice the evening before. This is my go to recipe.

I'd make a pot of tomato sauce with onion, red peppers and mixed beans and then add chicken or feta dependent on preference.

Or cook up a pot of veggie or meat chilli and have a bunch of baked potatoes and grated cheese standing by.

Or chicken caesar salad. Or macaroni cheese, pasta bake or cauliflower cheese. Or a chicken rissotto?

I thought about this thread tonight when I walked past Booths on my way home. Dinner was a bag of salad, a half price rotisserie chicken and a french stick. No prep at all and it was lovely.

We do shredded chicken in the Instant Pot to make tacos from. Tortillas etc can be left out for self serve.

Pasta salad is another good one.
