How long does bolognese need to simmer?

I do between 30 mins to an hour depending on when I want to eat and if it's too runny

A good hour or so. Longer if possible - it really makes a difference to both flavour and texture. And the vegetables melt into the sauce more, it becomes more homogenous, more of a 'sauce' and less lumpy.
I'm a Marcella Hazan fan on this.

I do the Michaela Chiappa ragu. That summers for 3-4 hours.

The longer the better. 2 hours + (at least) for me.

I also prefer it the next day.

I tend to make a massive batch of it and portion though as I don't usually have 2 hours + prep, to make dinner.

It'll be cooked and perfectly nice after 30mins - but gets better if you can give it longer.

I think half an hr to an hr is fine but then leave overnight as it tastes much better the next day

At least an hour (then cooled and put in fridge overnight) before eating.

I make it in the slow cooker. You can leave it all day to cook and it has more depth of flavour.

I also let it simmer for a few hours... but if you’re using a premade dolmio sauce I’m sure it doesn’t matter!

30 mins is fine. Ragu requires long, slow cooking but it's so worth it.

I made sine today and it was a very low light for about 2.5 -hours is now in the fridge will be reheated it always taste better the following day.
