Lasagna help

Every time I make lasagna the top doesn't seem to go soft and I end up breaking a tooth on it. So I do the layers and the top is lasagna sheet, white sauce and a scatter of cheese.

So wise people of Mumsnet, where am I going wrong?

Cover the lasagne when you cook it?
We always do. Top layer stays soft.

Oven too hot I think. Lower and longer is better.

Cover in foil for the first 30mins, then uncover and sprinkle extra cheese to get the browned top. Seems to work for me.
Alternatively, soak your pasta sheets before using.

Are you cooking the sheets before making the lasagna? Are you covering the dish for the majority of the baking time?

I cover with foil & brown at the end.
I also know someone who puts a layer of bare lasagne on top, which bakes rock hard & is thrown away before eating

Is your white sauce too thick? Has to have enough moisture to soften the sheets and still stay saucy

We do a layer of meat and tomato and a layer of cheese after the last pasta sheet. Always cover it thoroughly with the sauce and it's always fine. Never used foil

Oh maybe it is too thick. My plan now is thinner sauce, cover with foil and cook for longer and lower heat.

@Ianbro when you say soak, is that in hot or cold water?

I feel like I've been making it wrong for all these years.

Just cover it with foil and then remove the foil for the last 15 minutes.

By this of course you mean a whole big block grated creating a minimum 1-2cm thick layer of cheese? Cos a scatter just won't do.

I use hard dry lasagne sheets and it is never ever hard after cooking. The only hard bit is the slightly crispy top of the cheese.

Well @Instagrump I said scatter but yep more like fist fulls of cheese.

So the result from the critics..... The best lasagna I've ever made. I made thinner sauce, cooked longer and slower and covered with foil. Not sure what worked but thank you all.
