Bored of slogging away making “proper” meals. Any idea of nutritious simple meals other than omelette/jacket potato/bean on toast?

Filled pasta bought from the supermarket with some olive oil (and wilted spinach & pine nuts for extra nutrition.

Scrambled/poached eggs. Boiled eggs. Eggy bread.

Cheese on toast.

Sometimes I like to buy cooked chicken thighs (hot from the deli counter at the supermarket) and have that with salad and coleslaw.

I make this a lot, its very easy and delicious. Chop a handful of bits and bobs from fridge onion, tomato, mushroom, chilli. Put in a baking tin, add some spinach if you have it. Beat 6 eggs and a dash of milk. Pour over the veg, sprinkle a bit of grated cheese. Bake for 20 minutes. Serve with bread and salad.

Mashed spuds. Tons of butter and cheese, gorgeous and you won't die from lack of nutrition either.

Can top with lots of things of course, but simplest is just so lovely and best IMO.

My go to pasta bake for a quick fix:

1x pack passata, mix in some cream and a drop of olive oil. Season a dry herbs (basil thyme, oregano, ...)
Boil pasta and cut some tomatoes (or peppers or mushrooms or all 3) mix all together in a baking dish sprinkle with cheese and bake for 20 minutes.

Chorizo pasts is a go-to here - chop your chorizo, cook it low until it oozes oil, and while that’s heating chop an onion and a couple of cloves of garlic. Bung them in. Roughly chop a red pepper. Chuck it in. Boil water for pasta, and add a tin of tomatoes to the chorizo pot. Leave to simmer while your pasta cooks. Add in the pasta, serve. You can also add some frozen peas, chilli flakes, smoked paprika depending on what you fancy.

Chicken fajitas, chicken and veg stir-fry, quiche with baked potato and beans, stuffed pasta and sauce - other easy midweek dinners here. We also enjoy “brinner” which is essentially a full English for an evening meal, based on whatever’s knocking about - usually sausages, bacon, scrambled or poached eggs, beans, and a potato waffle.
