Best healthy cookbook for --real-- people with kids

I´m really struggling to come up with new recipes for our family meals. I think I have exhausted all my creativity over the past few years. My kids are rather difficult eaters (they love ready made lasagne, which they get once a fortnight, but hate anything with obvious vegetables). As a consequence, lately, I tend to cover everything with cream or cheese just to hide the veggies! I try to cook from scratch every evening after work so preferably I would have some recipes that are:

  • healthy
  • doable in 30-50 minutes
  • include normal ingredients (I had the Jamie Oliver 30 min. cookbook and I honestly felt the ingredients were rather exotic or expensive) that can be bought in our once-a-week shopping trip.
  • can include meat or vegetarian alternatives.

Have you come across a nice cookbook recently that you are enthusiastic about? Please let me know!

Have you seen Fay Ripley’s cookbooks? (3 of them). Wouldn’t normally go for ‘celeb’ cookbook, but borrowed a friend’s and was so impressed. Her books are what I use most. Not labelled as quick specifically, but they’re nearly all doable in a shortish time.
Also get an Instant Pot - there are some great pasta and meat one pot dishes you can do. I often make twosleevers.con dal and rice - also a one pot dish.
In fact, now I think about it the IP has taken over from Fay as so easy & quick...limitless recipes on the internet.

We’ve been really impressed with the ‘pinch of nom’ books - so far everything we have cooked the adults have liked (Dd 7 is a bit undecided on some). My only issue is that some things can be a bit salty.
