Reheated rice - would you eat this?

Made jambalaya last night. Took out of oven and it sat on the side for about four hours, then I put it in the fridge. Is this ok to eat, reheated properly?

How long can rice safely be out of the fridge?

No I wouldn’t eat it or let anyone else!
Rice has to be cooled quickly to be safely reheated.

Rice needs to be cooled very quickly after cooking or it can release toxins that are not destroyed by further heating.

I wouldn't risk it.

Reheated rice is fine as long as it was cooled quickly after it was first cooked. If you eat rice from a takeaway it will generally have been reheated.

Botulism is rare but serious enough that I wouldn't chance it

I probably would, but I reheat rice all the time and have never had any problems, so I'm probably a lot more lax than other MNers

No, there's no way I'd eat it.

I put rice not being eaten immediately in the fridge straight away and then microwave it for longer than necessary before it's eaten. I rarely do this though.

I leave rice out overnight and eat sometimes reheating sometimes not even. Don't even fridge unless it is bring kept a couple of days.

If rice has been cooked for sushi or egg-fried rice, cool it in the refrigerator until it is ready to be used. Sushi rice usually includes the addition of sushi vinegar and a mixture of sugar and salt, which helps prevent the growth of Bacillus cereus bacteria.

Reheating rice or other starchy foods doesn't kill the bacteria. The bacteria can withstand heating for 90 minutes at a temperature of 126 degrees Celsius.

Rice in ready meals is specially treated at extreme temperatures. I wouldn't touch your rice, but I did spend a week in hospital when my attitude was more lax.

I reheat rice dishes all the time and have never had a problem, would definitely eat the food you describe.

I'd eat it, I've never had any problems reheating rice, although I am aware it could happen.

I know they say you shouldn't but I always make extra jambalaya for a couple of days of lunch at work. Never had a problem.
