Making Chicken Soup

Probably a really stupid question but here goes! I plan to start eating healthier next week, and my plan of action is to make up home made healthy soups. Been looking at Slimming World creamy chicken soup recipes, which all seem to involve adding the chicken as well as the other ingredients, and then blending the soup. Is that right, that you actually blend up the chicken? and doesn't it go weird? And has anyone got any tried and tested healthy chicken soup recipes?

Blending it up doesn't sound appealing to me at all. Nor does using cream. I make a very basic, but very delicious chicken soup. First, I roast a chicken, using some of the meat for an initial first meal. The next day I simmer the carcass with onions, celery, and herbs for several hours to make a wonderful broth. I then strain and add add whatever veg I'm in the mood for, simmer until softened. Add the chicken and sometimes noodles, all the while making sure to season properly. It's amazing.

The best stock is made from chicken bones and veg but you can use good stock cubes.
I make soups all the time with what ever I have in.
If you are looking for low calorie veg is your friend. I have made a huge pot yesterday to last a few days,
Chop onions, carrots, leeks, and add stockand about 500mls passata Simmer and season, easy.
For a more filling but higher calorie add potato or parsnip, sweet potato.
If you like a thicker soup, COOL and liquidise
Add chopped coriander and a bit of yoghurt to serve,
If I am calorie counting I avoid meat.
Tinned tomatoes make a nice soup with stock and worcester sauce.
