Really quick healthy meals

I'm working an extra day and need a rapid meal. Current options are stir fry or fishfingers so any suggestions appreciated!

Doesn't have to be low fat, just healthy

Could you batch cook stew (with lots of veg and lean meat)

Or ready to wok noodles with veg and sliced chicken

Honestly, I really hate cooking, so if I have the option to not batch cook that would be better (plus our freezer is tiny)

Do you have a steamer saucepan?
Baby potatoes in the bottom in the water
Salmon fillets in the steamer bit
Lob some greens in a few mins before the end. Peas, chopped leeks, cabbage, broccoli (needs more cooking) all work well.
Dollop of garlic mayo

Whole thing is cooked in two pans with one lid. In about 15/20 mins depending on the size of the potatoes.

Pork chops - prob not v healthy
Pan fry very quickly for some colour, dash of cider in the pan to deglaze if you have any "hanging about" otherwise some boiling water or a dollop of chicken stock works well.
stick in a roasting dish with some chopped up apples. Oven around 160 for 25-30 mins. Time depends on size and depth of chop. Check it's not pink before serving.
New potatoes (no peeling) and some veg.

It's all pretty quick and low hassle if you are running around getting other stuff sorted.

Frozen salmon fillet (the sort you microwave from frozen), frozen prawns, petits pois, creme fraiche and rice noodles. Blast salmon, chuck prawns in a pan and warm through. Add creme fraiche, salmon and petits pois. Meanwhile pour boiling water over noodles. Takes less than 5 min and no chopping etc

Hummus, pitta/flatbread/oatcakes, raw veg, e.g. carrot sticks, peppers, celery, some cherry tomatoes, something green and leafy if you've got it. Fruit to follow, and/or yoghourt. Maybe a handful of nuts too.

Boil pasta. Add peas, green beans maybe broccoli for the last few mins. Stir in Crewe fraiche, Parmesan and smoked salmon.

My fav quick meal.

Large potato in microwave (9 minutes). Add baked beans and keep microwaving (5 minutes). Add grated cheese. Serve with whatever you have in the fridge that is green.

@Gasp0deTheW0nderD0g has described our usual Friday night lazy dinner! It’s an absolute fave in this house.

Scrambled eggs on sour dough with long stem broccoli on the side is quick.

Falafel wraps, cook falafels while spreading some wraps with hummus and scattering salad leaves over.

Couscous salad: crumble bit of stock cube, chilli flakes, paprika and a squirt of tomato puree into couscous in a bowl, add hot water to cover, cover with a plate and leave to stand for 5-10 minutes until fluffy. Add chopped salad veg, a tin of tuna/ sardines or a boiled egg.

Yes! Stick chicken under the grill, get couscous soaking/microwave some egg noodles and chop some salad veg. Job done

Just thought of another one if you like peanut butter.
Cook couscous or quick cook fine noodles in boiling water.
Dissolve bit of chicken stock cube in bit of cooking water, mix with a good spoonful of crunchy peanut butter, chilli flakes or any other spices you fancy, a slosh of milk if it's thick and eat soupily. Especially good to make with the end of a jar of pb, just chuck everything else in and shake violently.
If you're feeling like washing up, you can soften some onions and peppers first and do similar in a pan.

Omelette, with or without mushrooms, then salad and or broccoli or green beans on the side.

Jacket potato with tuna.

Cook chicken breast or strips in the oven in a bag with spices, herbs, frozen chopped onions and peppers, etc. served with rice, salad and or any vegetables.

Things you can make in advance and then re-heat:

Stewed chickpeas with spinach and onion (can add curry powder too).

Vegetable soups

Chilli con o sin carne, with rice or quinoa

I love spicy scrambled eggs. Fry chopped spring onions and quartered cherry tomatoes in butter, add a chopped chilli (or half if you don't like too spicy) and a teaspoon (or half) of garam masala. Tip it into a bowl and scramble two eggs per person in more butter. When it's not quite cooked, tip the other ingredients back in and stir through. Serve on whatever toasted bread you have. Yum!

Got a slow cooker? If not maybe get one. Dead easy to batch cook in these literally just throw in some meat (or in my case veggie subs) some veg (you could be really lazy and use stuff that comes ready prepped like carrot batons or frozen veg) some stock & herbs/flavourings or even be really lazy and use the sachets of slow cooker sauces you can get.

Turn on - go to work and come home to a meal already done!

Freeze or even just refrigerate the leftovers - they’re fine in fridge for couple of days.

Also dead easy to do chilli and curries in slow cooker (the long cook time means the spices really absorb) serve with cous cous, micro rice, instant/ready to wok/micro noodles or even tacos or wraps easy to get in sour cream and guacamole to have with too, even ready grated cheese or poppadoms or naan bread to have with curry

You can include potatoes or other carbs in the dish or simply do some to go with when you get in - again you could go really lazy and do a microwaved jacket potato or instant mash or cous cous or even just have a nice buttered roll with it.

Other days for quick meals you can have stuff on toast - I love beans on toast but I “fancy it up” by spreading the toast with either marmite or pesto sauce and add grated cheese on top of the beans same works for tinned spaghetti or creamed mushrooms on toast

Eggs are quick and easy to cook in many different ways inc frittata or Chucky eggs (boiled eggs mashed in a cup with butter & salt serve with toast), Huevos rancheros...

I’m not cooking much at the moment and actually I’m not really cooking at all as I’m only heating stuff up - I like cooking but my health is very bad at the moment.

I’m veggie so I’m having things like veggie pasties, quorn buffet/picnic foods (savoury eggs which are like mini scotch eggs, cocktail “sausages”, “sausage” rolls, “steak” bake, stuff on toast, quorn “chicken” pieces which I just eat with some buttered rolls or crackers and have some veggies like cherry tomatoes, sliced raw peppers, carrot batons, instant mash with beans & cheese, the aforementioned Chucky eggs or scrambled eggs mixed in with quorn “ham” and some tinned sweetcorn is nice.

There’s loads of things that are quick, easy and fairly nutritious.

Get fruit in too - fresh, frozen and tinned are all good. I’m on a grapes “kick” at the moment, always have apples in, but I also like tinned pineapple and peaches either as they are or with yogurt or tinned custard.

Stir fry veg (ready prepped and frozen makes life easier) with egg noodles. I normally add in some soy sauce, garlic powder, chilli powder, 5 spice and salt and pepper.

I piece of fish, I like smoked haddock.
Rice.
Orange juice
Water.

Put it all in a pan for about 15 mins, the liquid needs to be about 50/50 water and OJ.

You can throw in a handful of frozen mixed veg to make it a complete meal.

I currently make myself 'posh' fried eggs.

Seperate the white from the yolk, beat the white a little and add something to make it 'posh' smoked salmon or grated cheese or spring onions or finely chopped peppers or a mix.

Season.

Put some oil in a frying pan, pour in the egg white mix, make room in the centre for the yolk and fry as you would normally.

OK not that healthy but you can eat some salad with it.

Salad. Tuna ( smoshed with hard boiled egg/onion/peppers and mayo).Caesar or Greek.

Bit of white fish with spring onions and cheese on top, shove under grill for 5 mins.

Make “pesto” with kale, garlic, hard cheese and oil in a blender. Eat with pasta or potato or aubergine ( roasted),
