Cooking a Gammon I'm a Novice

CharlieHorseisKing · 24/12/2019 09:30

I need some wise words please. I'm doing Xmas dinner for the first time for 6 people.
I want to cook a Gammon joint today.
Can I put it in a cruiset type casserole dish with stock and chuck it on the oven?
Most recipes state roasting or boiling on the hob
TIA Xmas Smile

Do you have a slow cooker?
If so, you can cook it on its own for 4-5h (high), 8h low or add a jar of honey and brown sugar and cook as before.

Very easy and stress free.

No stock! It’s salty already.

Pop into the dish with a stick of celery, a carrot, onion, head of garlic crushed, peppercorns and juniper berries. Simmer gently for 3+ hours depending on size, or until a butter knife pushes in easily.

Remove the skin and score the fat. Stud with cloves if you wish.

Make a glaze of whole grain mustard, brown sugar and maple syrup. Brush over the ham and pop into a hot over for 30-45mins until the fat has crisped and caramelised.

You didn’t need stock for ham, it’s rich and salty enough.

Just add an onion, a carrot, some bay leaves and black peppercorns, let cook according to that the packet tell us you, then glaze with mustard and honey or marmalade and some hot sauce and roast to caramelise.

Or what the poster above said.

Boil it first, then coat it in marmalade and brown sugar and finish off in the oven.

I boil.Gammon first for about 20 mins minutes ,Otherwise its too salty ,then I roast in the oven in a roasting bag in honey for about an hour to an hour and a half of until it's ready .

Singlenotsingle · 24/12/2019 09:43

Take skin off first but leave the fat on, then coat. My OH says cut a diamond pattern I. the fat before coating.

Have a look at John and Lisa on ITV. He cooked a lovely gammon on it the other day.

You can put it in cold water, bring it to the boil and drain off that water. Then put it in your casserole dish, cover in coke or ginger beer and simmer in oven for 3-4 hours.
Then take out. Cut off skin, score fat, cover in glaze of choice and bake in over.

You can do the simmering and oven bits on different days.

I boil mine in apple juice and/or cider in the oven for. Few hours with carrot celery onion cinnamon, then roast for half hour with honey brushed over the fat (skin removed after boiling) I don't bother with cloves as don't like them

CharlieHorseisKing · 24/12/2019 09:57

I hate cloves too. remind me of toothache as a childGrin

we usually put it in an oven dish with a carrot, onion, peppercorns and and inch of boiling water.
cook for 20min per pound of meat with the lid on,
use the cooling liqueur to make the sauce/gravy. (usually I just make a roux and add the cooking water, it has plenty of flavour)

Check out the thread on gammon and slow cookers. Lots of ideas.

Weebitawks · 24/12/2019 10:08

I boil mine in cider and bouquet garni for about an hour and a half, then make a glaze with a bit of brown sugar, honey, soy and mustards and cook the gammon in the over for about 15 mins.

TheFaerieQueene · 24/12/2019 10:10

Check out the hairy bikers recipe on the BbC website. My DH did this one yesterday. I won’t be eating it, but it seems to have done well.

CharlieHorseisKing · 24/12/2019 22:28

Thanks everyone, I boiled the Gammon then smothered it in marmalade and brown sugar (skin off) and roasted it. It looks bloody lovely
Which is more than can be said for the Tesco finest Rolled turkey boneless breast that cost £35 and is mainly stuffing and doesn't slice properlyHmm
