Your best curry recipes - must be nut free

Please can you give me your best curry recipes. I have a chicken dish (tandoori) already planned so am looking for a meat, a seafood and a veggie one.

Must be nut free.

Anything slow baked/roasted good as I have an Aga Smile

Rajma (kidney bean curry)

You can use tinned beans or fresh ones that have been pressured/slow cooked until soft. I prefer fresh

Heat up some oil, or ghee if you don't mind the fatty option
Dice and fry a red onion until browning
Add ginger garlic paste (or chop fresh) and fry for about 5 mins
Add tomato passata
Add the kidney beans
I flavour with garam masala, a pinch of chilli powder, and kitchen king (can be picked up in most international aisles). If you want a bit of a kick then add fresh chillies too
Add water and leave on simmer until it thickens up

Serve with toasted pitta or rice Smile

This whole baked cauliflower is lovely. I usually do the sauce with cashews but there’s a nut free option available in the recipe (or just use a different sauce).
