Freeze Cheese?

Does anyone know - has ever successfully done this?

We have been given a huge chessboard of really luxury cheeses - which we'll never get through by ourselves. Would be great to save it for Christmas... but not sure if you can freeze all / any / some cheeses or not at all.

What do you think?

Yes, however their textures won’t be suitable for defrosting and eating as a cheeseboard, they’ll be better used in cooking.

Can you name the cheeses? I can tell you how to store them/if they’ll ripen well so you can eat them over Xmas without freezing.

It freezes okay but loses something in the consistency on defrosting. Goes a bit crumbly in my experience.

Surely the cheese will be fine in the fridge though? Don't need to freeze it if you want it for Christmas, only a couple of weeks away now? I have cheese in my fridge for weeks and weeks on end!

Thanks so much. I have too many to try and name, will keep them in the fridge and hope they're okay.

Knowledgeable people - how do I know if they are too smelly, or just very special cheese-lover smelly? I'm guessing it's not easy, but wondering if there is a trick I should know!

Wrap them in wax paper, not cling film, and don’t put them in a lidded container. They need to breathe or they’ll rot in the moisture given off.

Tasting is the best way to know, if they’re pungent but flavourful they’re fine. If they have a very bitter aftertaste they’re a bit old. Although some people love that!

If you have any hard cheddar type cheeses they freeze really well if you grate them first. They can then be used in fondue, sandwiches, pasta, sauces etc.
