What special food do you only (have time to) make at Christmas?

In our house, it's a home made Yule log - all that trying to roll up the sponge in a teatowel without breaking it Smile, and coffee & hazelnut macaroons.

And bread sauce.

I’m Polish so lots of disgusting(according to my kids and DH) food: pierogi(dumplings with sauerkraut and mushrooms), herring salad, poppy seed roulade, gingerbread, baked cheesecake.

Last year we were so skint we had chicken thighs for Christmas dinner, this year we will shamelessly overeat. We're having duck and hopefully a brace of pheasant.
I'm making florentines with home made dime bar toffee base, a tipsy trifle from scratch, and roast chestnut layer loaf with a flaky pastry lid.

Chocolate Lebkuchen. I found the recipe a few years ago and, everyone liked it, so I make it every year. I only make it once a year because it needs to sit in the fridge for 3 days before baking.

Usually a Christmas cake.. I did make today a really lovely osso bucco that I may make tin lieu of a turkey for Christmas. Very easy but tasted fancy IFYSWIM
