To freeze or not to freeze that is my gingerbread cake question?

It’s for Sunday. Will it be ok wrapped in foil in a tin till then or do I need to freeze it? I’ve not made one before and google varies between 2-5 days. Any bakers out there who can advise? My flat is quite cool btw. Also while on the subject what is best to fill it with? It needs to be child friendly so don’t want to add more ginger. Thanks

Gingerbread keeps well in a tin for at least a week. It actually improves after a day or two, getting stickier.
It’s not usually filled but you could drizzle lemony icing over the top.

Depends how much fat there is in it. Gingerbread cake can last for weeks if it doesn’t have much fat - but if it does then even freezing won’t help (the fat doesn’t freeze and so will just dribble out as it defrosts)

Thanks. I’ve just returned to the thread after lobbing lemon icing over it. Glad that’s been recommended. It has 250g butter in it to 375g flour. Hopefully that should mean it’s moist. Do I need to wrap it in foil as well or will it just be ok in an airtight tin?

Disford and billy I keep thinking of all that butter and my recent cholesterol test result and that’s putting me off scoffing it. At present. And I have just scoffed nearly 2 packs of Aldi chocolate baubles which I’d got to put on the Christmas tree for DGC. So I’m going to have to go back and re-stock on those now.

I adore ginger.

Bought cakes are not my thing but I would happily eat a full Jamaica Cake ANY day of the week.

The nicest bought cake bar none. I love to scrape the paper of all the bits. Heaven with a cup of tea.

billy the sticky bit left on the paper of a Jamaican ginger cake is truly a thing of beauty. Disford yes I’m thinking custard. You definitely need to drum up a cake now.

Early in my marriage my husband threw out the Jamaica cake paper without me having
done the forensic scrape.......Jesus but that was a real relationship low point..🤣

billy well done on having the strength to get through that with your marriage still intact. I imagine that was the first and last time he made that mistake.

But you need to read the comments about timings etc. It's good for vegans as there is no egg and it works very well with oatly barista milk. It has a lovely crisp top when it's warm that softens nicely if you don't eat it all the same day.

James Martin has some nice parkin recipes out there but Paul Hollywoods gingercake with stem ginger is amazing (just too big for our family).
