Water too cold, machine's program not suitable for that recipe? I tried ready mix but with similar results. Now just stick to recipes that came with the machine. 10 minute job to add flour, salt, sugar yeast etc. and perfect bread every time.

Try the basic white bread recipe for the machine first with some good strong flour and a new packet of yeast. What make/Model of bread maker is it?

I just think of the bread mix as flour and add all the other ingredients

Try the recipes that come with the machine first and with the correct programme. Measure quantities exactly. Don’t use old yeast. Good quality bread flour makes a difference. I’ve never used a bread mix so I can’t help with that, but I suspect it might not be the best quality one.

Depending on the bread maker it makes a difference which order you add the ingredients.

I’ve got a Panasonic machine, 400grms strong bread flour, 1tspsalt, 1tsp sugar, 15mls of oil and 3 quarters of a teaspoon of yeast in the dispenser. Less than 2 minutes, perfect loaf. Had the machine a year, have only bought one loaf in that time. It’s on nearly every day. I LOVE it.

Oops also 270mls of warmish water.

I do sometimes use the packets, but it makes a real difference to remember some recipes work best with additional butter . Also ice cold water for white bread, lukewarm water for brown flour.
Do use the recipes from the book a couple of times, it teaches you how bread 'works'.

Thanks all I will follow the recipes in the.booklet and see how I get on. It's a Murphy Richards fast bake. I will pop out and get the ingredients tomorrow

You have renewed my hope for lovely bread

I use the same recipe as @PetronellaOsgood .

I find that not all bread flour works. For example Waitrose Very strong Canadian produces a brick but waitrose Duchy organic produces a lovely loaf.
