Gluten Free Self Raising Flour in Christmas cake??

Will this go all kinds of Pete Tong if I make my Christmas cake with the only flour I have left in the cupboard?

I know gluten free self raising flour isn't traditional Delia & Mary, but I could get away with it right?!!........ [santa]

Absolutely fine. I have coeliac disease so don't use anything else, and I make my own Christmas cake. It absorbs more liquid than regular flour, so add a bit extra milk/water/brandy.

Add lots of brandy or if you dont drink alcohol use fresh orange juice

I’m GF and commented to someone on how amazing her GF cakes were, she said she adds extra milk (I think it was 2 tablespoons) to each recipe and that’s what stops them being too dry - so follow the tip as above and you’ll be fine.

Fascinating. I'll remember that tip too @43FaithInfinity. Thank you. Have needed to make a million (Sad) adjustments to my diet & cooking so I bet this will come in handy.
