Recipes specifically for 6.5 litre slow cooker anyone?

Posting in chat for traffic... I recently bought a 6.5 litre slow cooker (5.5 litre working capacity) for batch cooking. I understand that the yield from this beast is usually 8 servings, but the few recipes that came in the instruction booklet (food I’m not keen on anyway) were 5 or 6 servings.

I’m looking for recipes designed for a 6.5 litre slow cooker. I’m a terrible cook when I go off piste (so please don’t say “oh just adapt another recipe” my adaptations always end in disaster! The maths is never right!!) the vast majority of recipes online don’t even state what size slow cooker they’re designed for and many don’t give number of portions.

Can anyone point me in the right direction please? Keen on low carb stuff, soups, stews, chilli, joints etc, not curries, creamy dishes or puddings.

Thank you!

WHole joints of meat or a whole chicken will work, you don't need to add anything just put the meat / chicken in the slow cooker.

Pot roast - you can't have ideal quantities.

Brisket
carrots
potatoes
swede
parsnips
1 or 2 onions
peppers
boiling water
stock cube
dried mixed herbs

Slice the onions and put in the pot spread out.

Put the brisket in the middle of the pot on the onions.
Cut all the veg into 1/2 in slices
Pack the veg around the meat, keep adding more veg until there is no room.

Add the stock cube and herbs.

pour over boiling water until the veg are submerged.

Put on the lid and leave for 6-8 hours on high.

You said no puddings but what about steak and kidney pudding?

Yum! The pot roast sounds delicious! None of us eat kidneys unfortunately

The pot roast you can adapt, I know you said you couldn't but it really is easy, swap the potato slices for new potatoes or even tinned ones.

Play about with the veg, lots of supermarkets do a 'stew' pack of veg and you can also add tinned beans or sweetcorn.

Try different herbs and spices until you get something you like.

If you want to do a smaller amount or use one of your recipes for 4 servings then get a pyrex dish that will fit the ingredients, fold up a tea towel and put it in the slow cooker, put the pyrex dish with the ingredients in and then pour water into the slow cooker but not the pyrex (other than cooking liquid). It works like a glorified bain marie.

Chicken in red wine.

Get skinless chicken thighs, 2-3 per person.

Put them in the SC and season with salt and pepper. add 1/2 a bottle of red wine (you could probably use white but I always use red) then add boiling water to cover the chicken.

Then just leave it alone for 4+ hours.

I never use a recipe, get a pack of meat add it to the bottom of the pan.
Stick this one for 30 mins, while your dressing
Buy precut casserole pack, Tesco for fresh, but loads do frozen.
Add two packets of mix, the dried ones with all the spices in.
Cover it with water, till just lower than the veg height. Cook for 6 hours on high.
Add dumplings 30 mins before you serve, if required.
