What are you having for lunch today?

I cook dinner most days and can’t be arsed with lunch so everyone ends up snacking too much.
Family has toast and eggs for breakfast so I don’t want to do more bread or sandwiches.

What do you make for weekend family lunches?

salmon ,new potatoes and green beans is lunch today for me and my dd.We are cheating tonight though with a takeaway for supper!

on a weekend though we love jacket spuds for lunch with toppings ..chuck em in the oven for 1 hr and fill with beans.or cheese or tuna or prawn mayo ..dead easy! We sometimes reverse here though depending on what we are doing and eat a proper dinner at lunch then a snacky dinner like spuds or a big dippy cheese and french bread or pate n salad that kind of thing...stuff that doesnt take ages and doesnt need cooking!

Weekend lunches are usually

Cheese on toast / Toasties

Homemade soup with crusty bread

Homemade pitta pizzas

Hummus and veggie / salad wraps

Crusty baguettes with fillings

Usually served with fruit and crisps

Spicy Morrocan style veg soup, cheese, bread, followed by Waldorf salad and grapes.

We eat veggie food on Thurs (and a lot of Tues too); so I always chop enough veg to make soup for the weekend too. (Throwback from when DD danced fairly seriously and we were never home on Sats but it still suits us as weekends are busy.)

It's good to have a home made soup frozen in portions in the freezer as, as you say, it stops people snacking. And it's all so much less hassle if made in advance.

Greek salad and pitta today. I have soup for lunch most days at work and getting a bit tired of it! Quite often at weekends we have a veggie brunch (Linda M sausages, hash browns, eggs, mushrooms, avocado) around 11 and that’s enough til dinner.

Usually pasta, homemade soup or something on toast. Hot but minimal cooking.

Today slow cooker lasagne as MIL over for lunch. Did all the prep at 7am so can just dish up when they arrive. Otherwise normally depends on DC sports but usually have a pot of bolognaise ready for pasta or jackets with salad. Or soup and bread.

We don't eat breakfast, I've made lentil, carrot and ham soup and DH is out so will bring nice bread home.

Other times we'll have toast and egg, toast and beans, hot filled rolls, toasties, omelette, French toast or just whatever is needing to be eaten
