Gingerbread muffins made last night have moist bottoms, can I re bake them for an extra 10 mins?

I am crestfallen! There is about half a cm of not quite cooked mixture. The top half tastes great. Can I whack them back in the oven to finish them off?

If you want the rest to be overcooked, sure!

I think tinfoil over the top might stop further browning, and maybe if they hold their own so to speak, put on a baking tray rather than back in the muffin tin?

Well, they had another ten minutes on a baking tray. Now I wait!

I used foil muffin cases as no paper cases left, am convinced they are somehow at fault.

Not an expert either but I used foil cases once and I'm sure they weren't as good as when I used paper ones, even using the same recipe, same oven etc.

Gingerbread muffins sound fab though.....
