What's your go to? As easy as Banoffee but I don't fancy Banoffee.

Maybe chocolate mousse?

I layer up raspberries or blueberries with greek yoghurt and honey. Add some chocolate curl decorations if you have some. Looks pretty, no effort.

Don't think you can get easier than Eton mess. Whipped cream, meringue broken into pieces, strawberries or fruit of your choice, all mixed together.

Or Barbados cream, layers of Greek yoghurt and soft brown sugar in a glass. Prepare some hours ahead so the sugar softens to toffee-like syrup. Serve with ginger nuts if you have them.

Cheesecake is the easiest. Smashed biscuits - digestive or ginger or amaretti, held together with melted butter as the base. Then cream cheese with whatever flavour you like whisked into it with some icing sugar, topped with whatever you like. Toffee cheesecake or raspberry and vanilla or orange and dark chocolate or maple and pecan etc.

Parsimon, did you mean whole eggs or egg whites? We used to have apple snow sometimes in the 70s but using uncooked beaten egg white folded into apple puree. I expect that's out now for food safety reasons.

sniffingthewax, that's not far off how my mum makes her trifle. She uses trifle sponges rather than Swiss roll and uses the fruit/syrup from her tin of fruit to make up a jelly, supplemented with a little boiling water to melt the jelly cubes, and pours that over the sponge and fruit. Then a layer of custard (Ambrosia) over the jelly when it's set and a top layer of whipped cream. Mmmmm. On the very rare occasions I make trifle, I do the same but with a good slug of sherry over the sponge. I don't use fruit cocktail, generally stick to one fruit to match the jelly (but I do use tinned fruit because it's so easy).

Apple Snow to me is stewed apples topped with meringue. Home made of course. Bit of a faff, but gorgeous.

I just give a good quality vanilla ice cream with Baileys on top plus a bit of grated dark choc. A few raspberries on the side if I can find them. Easy Peasy.

Just the egg whites. As a pp said: spiced stewed apple with a meringue topping. Go-to pud on a grey Saturday at this time of year

Chocolate mousse is my go-to. It's easy to make, HAS to be done in advance and everyone enjoys it. I can practically make it in my sleep, I've done it so often...

Buy a plain lemon cheesecake, pipe some whipped cream on the top and fresh strawberries or raspberries in the middle.
