Someone tell me what to cook with some meatballs

Ive got some meatballs and always find spaghetti with them boring and bland. Any better ideas please?

Posted too soon, meant to say I use Waitrose or M&S ready made meatballs, can’t be doing with faffing about squeezing sausages from their skins.

I do a meatball and gnocchi bake with tomatoey sauce and loads of veg. Always goes down well at mine.

A sauce with tomatoes, onion, pepper, coriander, ground cumin, paprika and black beans. Serve with rice or tortilla chips.

They're usually served in a rich sauce with thick crusty bread as a side in Italy, you won't find them with pasta. I'd prepare them in a rich sauce, cook some nice green veg on the side like spinach and serve with some chunks of excellent bread.

If you want to try other Italian styles you could use the meat from the meatballs to stuff some paccheri or involtini or to make a lasagna.

Tomato sauce with chilli in it, rice and sour cream on the side. I also like mushrooms and peppers cooked in with the sauce

Thanks everyone! I am a useless cook so would the people below mind sending some brief instructions for their dishes as I wouldn’t have a clue!

Anyone with good tomato sauce recipes would also be very welcome! Tonight’s Aldi jar sauce just didn’t do it for me.

1.Fry the meatballs and set aside.
2.Chop an onion and pepper and fry until soft.
3.Add a clove of crushed garlic and about half a bunch of coriander stalks, chopped, 2 tsps of ground cumin and 1 or 2 tsps of paprika, depending on if you want it spicy. (I only had sweet paprika and added 1 tsp and it was fine, but 2 would be better I think.)

  1. Add a tin of tomatoes, a tin of drained and washed black beans and season.
  2. Put the cooked meatballs back in the sauce and leave to simmer while the rice cooks.
  3. Stir in the coriander leaves and serve.

The kids love this recipe.

I did the sauce with leftover roast chicken instead of meatballs last week and it was delicious!

@Greedytiger I often use the bbc good food website if I have an ingredient that I'm not sure what to do with. I find most of their recipes simple and easy to follow. I got the meatballs recipe from the good food magazine, so it may be on the website too.

I’m a rubbish cook and am getting bored of the same 5/6 recipes on repeat so need to add a few more to the list! Also feeding a just 3 year old and a 7 month old.

@Greedytiger I don't really follow recipes, I just make it up as I go along.

My basic tomato sauce goes a bit like this:

Fry diced onion, grated carrot, diced celery with salt & garlic paste and a splash of water with the lid on the pan so it softens. You can add whatever other veg you've got in as well, peppers or mushrooms are good.

Add a tin of chopped tomatoes (or 2, depending on how many people you're feeding), salt, garlic powder and whatever herbs and spices you like. Chilli and paprika works well with meatballs I find.

Simmer down until the sauce is thickened.

I change up the seasoning all the time. Whole grain mustard, pesto, worcestershire sauce and Marmite all can add a certain "je ne sais quoi" to a dish that really lifts it, depending on what you've got in there.

This is a great recipe and really quick - you just chuck it in the oven.

Method

Finely chop ½ x 20g pack fresh coriander and mix in a roasting tin with 2 tbsp Blue Dragon Sweet Chilli Dipping Sauce. Toss a 300g pack 20 Organic Pork Meatballs in the mixture until well coated.
Bake in a preheated oven at 180°C, gas mark 4 for 15-20 minutes or until cooked through and there is no pink meat remaining.
Meanwhile, chop the rest of the coriander and mix with ½ cucumber, deseeded, halved and sliced, ¼ finely sliced red onion and 1 tbsp Blue Dragon Sweet Chilli Dipping Sauce. Serve the meatballs and salad with rice or noodles.
