For the love of God can someone furnish me with a recipe for a good scone?
I cannot make one that doesn't look like a very depressed and tasteless rock cake.

Oh and I don't twist before someone suggests it.

BBC good food classic scones with jam and clotted cream. Just handle and roll the dough as little as possible and roll it out thick.

FlibbertyGiblets · 28/10/2019 15:48

Watching with interest. Paul Hollywood's scones were my latest disappointment.

Scones are easy. As fishon says minimum handling of the dough. If you're still having problems Tesco/Sainsburys etc sell perfectly acceptable scones.

yikesanotherbooboo · 28/10/2019 15:51

Keep it all cold, roll out very thick and eat ASAP.i use Delia recipie but roll out more thickly than she says

EvenPhilip · 28/10/2019 15:52

It was the BBC one's which were this afternoon's disaster Grin

Use good quality ingredients

Check your oven temperature. Make sure it is properly at temp before putting scones in.

Eat ASAP - but not straight out the oven, allow to cool a bit. Grin

That one never fails for me either BBC Classic scones

Smellbow · 28/10/2019 16:10

Was the mixture really wet for the BBC scones, OP? I use that recipe, but find I have to have the mixture really sticky, so I have to put a lot of flour on my hands just to pick up the dough. Also I don't roll it out with a rolling pin, just press it gently with my hands. They wouldn't win a prize at a county show, but they are very light and fluffy.

If you can get lard, there's a National Trust teatime recipe that has half butter and half lard and makes super light scones.

Stationeryqueen · 28/10/2019 16:10

Was going to recommend Paul Hollywood recipe, but seen that hadn't worked for you. Bit of an old article but any help here?

Absolutely agree with PP's tips and also if you are using a baking powder, just check it is fresh and not accidentally damp. I've had fails with out of date baking powder before.

SpiderCharlotte · 28/10/2019 16:18

My scones were always shit til I tried this recipe and now they are clouds of loveliness. The dough should be quite wet and don't handle it too much. Good luck!

Try Nigella’s recipe from Domestic Goddess. Works every time for me.

Blueuggboots · 28/10/2019 16:21

I second @karmakameleon.

BikeRunSki · 28/10/2019 16:24

Do you use sour milk?

SDTGisAnEvilWolefGenius · 28/10/2019 16:27

When I get out from under the dog, I will find my recipe - it is from the penguin cookbook, and has never let me down.

EvenPhilip · 28/10/2019 16:30

Have used buttermilk , ingredients are good quality but I will check dates on baking powder etc.
Will try some of the other suggestions though.
Thanks 👍

Don't roll the dough, pat it out gently.

Ted27 · 28/10/2019 17:15

Delia Smith - I follow her recipe to the letter, Always have perfect scones. They are the only things I can bake

jokerreturns · 28/10/2019 18:04

I've used the bbc good food recipe as already above.

Didn't roll out the dough though, handle as little as possible

DareDevil223 · 28/10/2019 18:19

The Paul Hollywood recipe is the only one that turns out reliably amazing scones for me. The best tip is to not twist the scones when you cut them to but to cut them clean.

DareDevil223 · 28/10/2019 18:22

Also he uses strong white flour rather than normal flour and that seems to make them rise better. My scones were always a flat disaster before discovering his recipe.

FlibbertyGiblets · 28/10/2019 23:22

Oh! No twisting! Top tip. Cheers!
