Difference between caster sugar and golden caster sugar??

I'm making my usual chocolate fudge cake tomorrow that I usually use caster sugar with, but I've only got Golden caster sugar. What's the difference? Could I use it? Same amount??

I only ever buy golden now, use in exactly the same way (I think the difference is it is not bleached so more natural in colour) It might make it slightly more fudgy ! I'll be round later for a slice

Is it not a bit less processed than white caster sugar? I'm sure the same amount of golden caster sugar would work fine

Golden caster sugar is slightly less intensively processed - the whiter a sugar is, the more processing cycles it has gone through to remove all trace of the original vegetable matter other than the pure sucrose. You might be able to taste a very slightly richer more molasses-like flavour which could only be an improvement IMO.

Since discovering golden caster sugar I've stopped using regular caster sugar in my baking. It adds a subtle caramely richness. It's seriously lush. Use just as you would regular caster sugar.

If you wizz up normal sugar in the blender to it is fine you get caster sugar no need to buy the stuff. Just get normal sugar.
