Pumpkin recipe needed please!

Yr10 DS has to make a dish in food tech at school next week.
He’s been looking up recipes online for the last hour but can’t find anything that will fit the bill. Basically, the specifications are:

  • Must use a fresh pumpkin that he cuts and prepares himself.
  • Must include a cooking ‘technique’ (for example a tart with homemade pastry or pasta dish with homemade pasta)
  • Must be prepared, cooked, presented and cleared away in an hour and a half maximum.

The problem he is having is mainly the time issue. Apparently it takes about 45minutes alone to roast pumpkin in the oven.

Has anyone got any ideas, or ideally recipes, that he could use please?

would pumpkin brownies work? they take 45 minutes to cook but he should be done in time. or pumpkin gnocchi with sage butter if the brownies don't use a 'technique'

He should be able to boiled diced pumpkin (about 1 inch in size) to soft in about 20 minutes, so 30 mins if you include prep time/bring water to boil. He'll sacrifice some flavour over roasting and will need to think about moisture, but it's definitely feasible.

Thanks, I’ll get him to have a look at these suggestions tomorrow.
I hadn’t thought about boiling it actually, so that might be a better option.

Pumpkin soup! Fry cubed pumpkin, add other veg then water and stock and simmer for half an hour while clearing up. Blitz, serve, wash pot.

Otherwise, pumpkin ravioli. It says 1.5hrs but you can do it in less time. My DH has done it in an hour.

Pumpkin gnocchi? Pretty colour, boil and mash with potatoes, add some herbs, serve with melted butter?

Could he get a mini pumpkin? I've just made two of these tonight. A mini pumpkin with the tops cut off and seeds scooped out, the drizzled with oil, salt, sage and basil, and roasted in the oven for 30 minutes. Then take it out and crack an egg into it and drizzle more salt, then put back into the oven for 10 minutes or until the egg white is set, then top with coriander. It was utterly delicious.

Although that may not have a cooking technique angle, unless there was something he could put underneath the eggs.

Oh and if you cant get pumpkin, butternut squash works just as well. I actually prefer it, its finer

I peel, coat with olive oil and sprinkle with rock salt and ground pepper. Then roast with some onions and garlic til caramelised, then whizz it up with some liquid (milk or stock). Extremely good and within your timings. Not sure about techniques.

Pumpkin is great in curry. He could make a bread to go with it. Jamie Oliver’s easy flatbreads made with yoghurt are lovely.

There is a Jamie Oliver recipe for roast squash with cumin and fennel. You could probably par boil the squash for 10 minutes and then roast.

I made a lovely lasagne with it with bechamel sauce, pine nuts and Parmesan cheese. But timing is tight so he could do that with tagliatelle to be quicker. Maybe throw in some spinach or rocket to add some greenery.
