Help with cookies covered in sugarpaste

I used to be a cake decorator but have never done covered cookies before. I’m making Hey Duggee cookies for my twins birthday party on Sunday. I’ve practised a recipe this morning and the biscuits have come out well but I have lots of questions - can anyone help?

  1. Can I make the dough in advance (perishables are Stork block and egg) and refrigerate? If so, how far in advance?

  2. Can I bake the cookies in advance and store in an airtight tub? If so, how far in advance?

  3. I know sugarpaste goes soft in an airtight container so I guess I need to cover them the day before and not store them in a tub?

  4. Should I be using edible glue to stick the paste on or something else?

Thanks so much for any advice!

I do cakes mostly but have also done sugarpaste covered cookies.

  1. Yes you can make the dough well in advance. I roll mine out between sheets of baking parchment and freeze till I need them. You can then cut out the shapes while frozen (they defrost very quickly). Or even cut out and then freeze and bake from frozen when needed.
  1. I’m pretty sure sugar cookies keep well once baked. I don’t think I’d stretch beyond a week though.
  1. Sugarpaste will stay soft in an airtight container. I would just keep them loosely covered on a tray.
  1. You can use edible glue or thinned jam for a nice flavour. I guess you could even do melted chocolate.

Amazing, thank you! I’ll make up the dough tomorrow and pop it in the freezer, and then bake some at a time through the week, will save me a lot of stress that way!
