Veg pie - would this work??

Green beans chopped into inch long pieces, chopped courgette and cherry tomatoes baked in the oven with a sweet potato mash?

Would it work?? Should I add anything else?

I don't think that would be very nice. It would basically be uncooked veg under mash. You would need to cook the veg first and maybe add some sort of liquid/gravy. I would fry the tomatoes up with some onion then add courgette, mushrooms and pepper. Then add some sort of white sauce or gravy so it is moist. Look up some recipes. There loads online.

Yeah I agree with apollo. That sounds really plain. You need some kind of sauce.

Do you have any cheese? Could you roast the veg and bake the sweet potato, then put grated cheese over the top?

It sounds a bit wet.

How about slicing the courgettes up and baking them with salt and chilli flakes, lay them on top of your mash perhaps with some cheese, grill it and serve with the beans on the side?

When I do a veg pie I use chopped root vegetables and chopped green beans, put them in a cheese sauce and then top eother with mash or a sheet of puff pastry.

From various attempts of mine in the past I would say courgette and tomato tend to go rather mushy - (courgette is quite a watery vegetable but may be OK if you de seed it and cut into dice)
Regarding mash I find that a ash that is all sweet potato can be a bit dense I usually do half and half eithe sweet potato and potato mixed togather or mashed potato with about one third swede mixed in is also nice.

The puff pastry version is obviousl much richer - but is very easy - I just buy those pre rolled sheets and pop on on top of the mixture.

You could vary the sauce for your veg - make a white sauce and maybe have a bit of grated cheese on top of your mash. Or a parsley sauce might work as well.

Or cut the sweet potato and courgette into discs and roast with the tomatoes. Add some grated cheese a few minutes form the end.

I would either make a curry or make some kind of mixed vegetable and potato cake.

The pie just sounds dull and not very flavourful.

@KurriKurri how do you make a white sauce?
I have some normal potatoes so can mix the mash.
Will probably roast the courgette & TOMS first to dry them out a little I think

I'd roast the courgette, tomatoes an sweet potato diced together in a dish (sweet potatoes will take longest so put in first) and serve with beans on the side

Oh that’s a good idea. A kind of mixed veg cheese instead of cauliflower cheese.
Though I would do the SP mash on the side. In that case

White sauce is just flour butter milk
Lots of cheese!!

That's a very "wet" mixture and rather flavourless.

Have you no herbs/spices? Drier veg?

I also think a curry would work better

I make white sauce by making a roux from melted butter or marg, add some flour - cook it off a little (so flour doesn;t taste 'raw')then gradually stir in your milk little by little. I always heat the milk up first and keep stirring all the time - this stops it going lumpy.
If it does go lumpy, a blitz in a blender will usually sort it out !
If you want a cheese sauce just add cheese to the finished sauce - off the heat - just let it melt into the hot sauce.
(You'll need to look up a recipe for quantities - I'm so old and been doing it so long I just know roughly the right amounts of everything)

Another thing I sometimes make which is easy (and I have done this with courgettes and it was nice) I put the lightly cooked courgette in a cheese sauce, and I top with a savoury crumble - exactly as you would make a crumble for a sweet but use half flour half porridge oats, and omit the sugar and put in a bit of cheese,, salt and pepper (a little dry mustard powder if you like) instead.
Very quick and easy and always popular in this house.
