Chicken recipe help!

I have a piece of flattened, bone removed, skin on chicken 'hindquarter' (so I suppose the thighs?)

I ordered this by mistake as I didn't understand properly. (In Spain)

I was going to do roast chicken, what on earth can I do with this?

Any ideas would be so welcome. TIA.

You can still roast it, it will be done faster, that’s the only difference

I hadn't thought of that! Thanks, I think I'll do that as have all other things for a roast. It's just such a strange flat shape!

I looked up recipes for stews, but can you stew this sort of meat and what about the skin? Anyone know? None seemed appropriate.

Marinade it in something nice, slice it up and fry it? Or roll it up, stuff it with something yummy and roast it like that?

If you roll it up you will lose the crispy skin.

This is what my mother does with flat chicken: she mixes some rice with finely chopped onions and some spices, adds some olive oil and lets the rice sit for a bit. She then spreads the rice, puts the chicken on top, salt, pepper, lemon and bitten on top on the chicken, some stock or white wine in the roasting tin around, but not too high, so the skin goes all crispy and the rice cooks under the chicken with the juices.

Roast.

It’s really good.

That sounds wonderful Chardonnnay, a bit 'paellaish' which would appeal to DD.

I am going to try and roll it keeping skin on the top (If I can). If I can't, this sounds like a really good recipe which is all in one pan. Great!

Chardonnay- that sounds lovely. Do you know what kind of spices, and forgive me but what is 'bitten' on top of the chicken? I think my kids would like that recipe.

She uses black water pepper and some rhyme.

Bitten was meant to be butter. My mother is a big fan of putting butter on everything that stands still.

I do something similar to chardonnay's recipe, but use a whole chicken, and mix tinned chopped tomatoes, paprika, thyme, lemon juice and chopped up white cabbage in with the rice. It soaks up all the chicken juices and is delicious 😋

Haven't thought of cabbage, but some leeks and mushrooms would be good too.

My mother adds potatoes, but then she's not afraid of double carbs and butter.

@Chardonnay, I had a image of you all been served chicken with teeth marks in it where you DM has bitten the top of it Grin

I have done similar to PP, using lime , ginger, lemon grass and soy sauce.
I spread it thinly then roll the chick up to make a swizz roll type affair.
It's best to hold it together with skewers so that it doesn't unroll.
