Alternative is putting eggs, butter, flour and sugar in bowl and whisking everything together at same time.

Oh sorry I’m with you now! I thought you were talking about making buttercream (which doesn’t even contain sugar!) I’ve officially lost the plot!

I’ve got to say from my experience I’ve always got a lighter sponge from beating the butter and sugar first, until the butter turns white, then beating in the eggs. Then sift the flour and lightly fold. Light, fluffy and rising beautifully every time.

If you whisk it all together you have a AllIn One mix rather than a Victoria Sandwich mix.
Not much different, but the Victoria one is lighter.
