Keep them in a brown paper sack in a cool dark place until you need them. Should keep months.

Salmon fishcakes.
Roast dinner with sufficient roasties.
Poached smoked haddock on mash.

All assume they're second earlies/reasonably dry. If they're new, paper sack in a cool dark place until you need them.

Bake them. Scoop out the middles to make mash (makes amazing mash)

Drizzle skins with oil and salt and bake again for the best snack of all time.

Or add sour cream and cheese to some of the mash, put back into the skins and bake. Extra points for bacon.

Now really sad I don’t have any potatoes

Corned beef hash.
Colcannon - Layer sliced spuds with onion, bacon or sausage bits, spinach or greens, add chicken stock, brush with oil and bake until the tops are browned. You can freeze it as well.

I have quite a few bags of frozen mash in my freezer. I scrape the extra from the pan each time and freeze.
I use it for emergency thickening of stews, tops for Shepherd's pie and just mash for quick dinners. If you make a good mash then it'll come out of the freezer nice too.

Cheese and potato pie (basically mashed potato with a fuckton of cheese in and on top then baked)

I also always have mash in the freezer for young DS (tend to do a mix of whatever I have left over - potatoes, sweet potatoes, left over veg) then freeze in portions so he has something easily available to go with something if he's not eating what we're eating

I sometimes partially roast a load of potatoes and freeze them. You can then finish them off in the oven for quick weekday meals. They freeze quite well.

Make roast potatoes and freeze. They freeze really well. Take them out of the oven when they are just turning golden, cool, open freeze and bag up until needed. They cook straight from frozen in a hot oven for about 35 minutes and are far better than any frozen roasties you can buy in a supermarket.

Peel, chop into small chunks, shallow fry in 50/50 butter and olive oil, with crushed garlic and some rosemary, turning frequently. Once the chunks go opaque and take on some colour, put in roasting tin, sprinkle with a little grated strong cheddar, add some black pepper and stick in oven for about 20 minutes or till done.
