Batch cook something and freeze some for a rainy day maybe?
Tomato soup
Pasta sauce
Dry some out and jar them up, that way you can rehydrate for other recipes and they last for months
Veggie chilli or bolognese
Homemade tomato sauce

You can freeze them! We always buy loads of fresh tomatoes in the summer when they’re at their best, then wash them and put them straight in the freezer. They turn to mush when cooked but really add flavour to sauces in the winter.

Chop them up, freeze them and use them when you make a ragu for spaghetti Bolognese or lasagne.

Make chutney.

They are very wet when defrosted. I would make tomato soup and tomato sauces for pasta and the. Freeze.

I like to make a tomato pasta sauce and preserve it in jars. Tomatoes are relatively acidic so they are quite safe to process in a water bath if you add a bit of lemon juice. Look on the Bernardino website, they have recipes and instructions. I add some garlic, hot pepper flakes and fresh basil. Really nice to crack open and have over pasta on a cold February evening. Always tastes fresher than commercially canned.

Dry them in a warm oven.

Halve, sprinkle with salt and olive oil, oven at 120C until well cooked down. Then put into sterilised jar and cover with olive oil, keep in fridge.

Roast them in the oven slowly with garlic and herbs then put them in the freezer. Makes a very delicious pasta sauce!

Another vote for LivingTheDream’s easy pasta sauce. When I have a glut i chuck the tomatoes in the bottom of the oven with some olive oil garlic and herbs. Mostly they just go under anything else htat’s cooking at the time but if solo I’d guess 180 degrees for about half an hour. I then liquidise and sieve it as DH hates lumpy bits and freeze it in those freezer bags you can get that stand up. Use instead of tinned tomatoes in any recipe.
