What is Heavy Cream ?

So looking at a recipe for a mushroom and bacon sauce it require 'heavy' cream, I've googled heavy cream but apparently I can use evaporated milk instead?

Isn't evaporated milk slightly sweeter or will it be ok?

It's a bit lighter than double cream but heavier than whipping cream. Double cream is the closest we've got.

It's the American version of double cream - I think it's more pasteurised.

I've always used double cream in American recipes that say Heavy.

I don't think evaporated milk is as sweet as condensed milk but it might be ok for sauce as there are sauce recipes on the Carnation website that use evaporated.

Do you think the evaporated milk would do, I've got some in the cupboard, otherwise it's a 15min drive to our nearest ASDA?

No, definitely don't substitute evap. Totally different taste. You need double cream.

It calls for a 1/4 or dry wine, is that about 60ml.

A quarter cup is 60ml, yes. Standard cup measurement is 240ml

So just looked at the recipe again, it does actually say..
1 1/2 cups (400ml) heavy cream
In brackets underneath it says
(Thickened cream or evaporated milk)

I'm going to try it..
