Healthy, filling lunches

My current diet is terrible. I’m in a horrible cycle of being tired then eating rubbish and then feeling rubbish from eating terribly! Anyway I need some ideas for filling lunches as part of the problem is I cut down to eat healthier but then get awful headaches which I fix with chocolate! So ideas for something that will fill me up please!

Do you have leftovers? I purposely make bigger portions so we have lunch the next day. Pastas, wrap based meals, items with rice.... everything , easier that way no extra prep Grin

Definitely leftovers or thick lentil and veg soup.

We don’t tend to have any leftovers but I could obviously make more and save it. Soup is a good idea and filling!

Poached egg on a slice of toast, beans on a slice of toast, tomato or avocado on toast, tuna sandwich.
Banana is the most filling fruit.
I like cottage cheese and tomato on a Rye Ryvita. I have two. Not hugely filling but a nice healthy lunch.

For lunches I often get out of a rut of boring cheese sandwiches by putting extra salad, tomato cucumber etc on to liven it up a bit. Also try peanut butter and salad sandwiches ( I like pb with tomato but I might be weird), hummus on a sandwich or with oatcakes, carrot sticks etc, lentil soup as others have said (I really like a kind of thinner dhal). I try to put on an extra portion of pasta/ rice/ potatoes with my tea and then use it to make up salads the next day. It doesn’t always have to be mayonnaise-y either if you want healthy, rice and potatoes are good with a vinegarette (sp?) and I do a cheese and tomato pasta salad like the ones you get in Tesco using a mix of tomato purée and ketchup, grated cheese and diced tomato

My fav lunch takes 5 mins to make.

Large frying pan on hob, spray of oil, add a large bundle of spinach & allow to wilt in the pan. Then add your choice of veg. I personally add frozen peppers, frozen peas & frozen red onions (I use mostly frozen veg for ease). Maybe chuck in some cherry tomatoes.

Heat through, season (I add salt, pepper, garlic powder, chilli & maybe some Cajun) and add your choice of sauce. I like a tablespoon of a tomato & mascarpone pesto with a tablespoon of creme fraiche. I also add some ready-cooked chicken but this is optional.

Delish 😋
