Everyday cheap vegan recipes please

DS has come to live back home after university - he is also a very new vegan. He is a keen cook and so far has produced beautiful meals for the 2 of us. However, most seem to contain exotic and expensive ingredients. He also drinks vast quantities of milk substitutes. Overall, my shopping bill has gone through the roof (he is job hunting, so is not contributing financially at present).

The cheap meals we have had are lentil shepherds pie, chickpea and butternut squash curry, lentil bolognes, tofu stirfry. I am not a vegan or a vegetarian, but am happy to go with the flow provided we can cut the costs.

Also, re quorn. I agree, it's horrible stuff, but the chicken nuggets they do are bloody glorious

Like Delia’s recipe but instead of her cheese scone base, use bought flaky pastry: supermarket own brands are vegan.

Puy Lenti Ragou with veggie sausages on top.

Spaghetti a la Norma : leave out the cheese. Lidl often have cheap aubergines.

Adapt noodle soups, add garnish of crushed toasted peanuts. Or Tofu fried in ginger.

Burritos with rice, refried beans, fried plantain slices, guacamole .

Rice and peas with callaloo (tins) and fried plantain. (Proper Caribbean Rice’n’peas, use veg stock instead of putting in pig tail)

Aldi soya milk is 59p a litre, almond milk is 89p

I make my own cashew or hazelnut milk. 1/4 cup roasted soaked nuts (I roast them) to a litre of a water. A little sugar, a little salt and a dash of sunflower oil (which stops the separation). Blend and strain through a muslin.

I haven't been vegan (or actually even fully vegetarian) for many years, but I still really like chilli with corn, mushroom non carne (use soaked, blended cashews for the creamy sauce), bean burgers (there are lots of recipes available online, just experiment until he finds a cheap one that works). A pressure cooker is enormously useful for all the beans, etc - buying them tinned works out really expensive in the long term, & hours of simmering on the stove is also pricey. Recommend a small electric pressure cooker, e.g. a mini Instant Pot, or Pressure King Pro could cut down costs long term.

All Deliciously Ella’s recipes are vegan (with the added bonus of bring gluten-free if you need to avoid gluten, and also free from processed sugar too)
