Summer holiday meal plans please

Trying to meal plan for the week ahead. It's so hard.

It's me and DS2(9) every night. I'm low carbing. DS1(20) and GF are here some nights and not others, mainly due to their jobs. So I need meals that can easily be frozen if not needed.

Had Thai green curry tonight. After that I'm all outta inspo.

Omelettes with whatever fillings you and DS fancy, with a side salad. And a baked potato for DS if he will otherwise be hungry.
Poached salmon with veg. Baby new potatoes for DS.
Ploughman's, with no/less bread for you.
Gammon, egg and peas, with chips for DS.

Cook up a vat of bolognaise and freeze in portions of two. Can then be used for pasta bolognaise, on jackets etc. For you just have with courgetti or veg with cheese on top.

Stir fries with prawns or beef or chicken. No noodles for you.

Cheese on toast but you have saganaki fried (no carb heaven).

Omelette as pp have said.

It's a bit hot now but slow cooker stews with potatoes in then served with a hunk of soda bread. No pots or bread for you.

Chilli batch cooked, chicken pieces and salad with homemade bread, stir fries, stuffed peppers etc, we do eat a lot of pasta

Bought meatballs and chicken thighs tonight at Sainsbos so can make big dish and freeze if necessary
