Vegetarian meal plans for this weekend!

DH is veg. The rest of the family are not, but we ought to eat more veg generally (I rely on grilled meats and salads too much).

What veg-heavy meals are you having this weekend? I am not a huge fan of cheese, so would like to limit that if possible. Does not have to be fancy- DC1 has a range of issues and some of them relate to food.

Just looking for ideas really! (I have already made a breakfast frittata, but my inspiration stopped stone cold dead after that!)

Vegetarian lasagne (don’t need to use cheese, I don’t for my dairy-allergic DS) or cannelloni
Veggie curries
Chickpea burgers

Caponata with focaccia
Bean chilli with rice or corn bread
Large veggie platter (mix of raw, roasted, steamed) with hummus and flatbread
Veggie stir fry with peanut sauce
Smoothies with added veg
Homemade bean burgers with coleslaw

Always serve veggie sticks or salad with/before every meal.

We have a mix of veggies/meat eaters/fussy kids so I feel your pain!

Falafels- either bought or home made
Veggie chilli- I usually serve this in a bowl on the table with wraps, salad etc and some chicken on the side for the meat eaters so everyone can serve themselves
Stir fry with tofu and cashews
Quorn meatballs in homemade tomato and basil sauce with spaghetti
Filled potato skins- bit fiddly but scoop out the middle and mix with philadelphia/ spring onions/ peppers etc and bacon for the meat eaters then put back in the oven to crisp up

I have one very picky eater who mostly eats red meat but we have had great success with Quorn sausage toad in the hole and also with home made kidney bean burgers (provide lots of sauces etc to play with). Veggie chilli burrito is my next thing to try on him. Eggy bread and beans is a great easy dinner the kids can cook themselves.

DH and I eat a lot of dahls, bean curry, aubergine curry, potato curry. Also ratatouille, omelette etc.

My family love their puddings so sometimes main course is quite light - salad with hoummous or egg and I sneak extra nutrition into pudding (wholemeal flour and fruit in a cake for example)

Love the idea of serving veggie sticks before the main meal. That is something everyone in the family could cope with... veggie sticks and hummus and then I could do soups and nice breads. DS adores Heinz tomato soup.... I won't feel so guilty about that if he has lovely fresh veg beforehand!
