Pulled Pork

Sorry for the long background, but I think it's relevant.
I'm part of a board gaming group, with the host rotating with each meeting, and the host provides food. Most people do oven pizzas. Last time I hosted I made pulled pork and put that out with stuffing, apple sauce and rolls for people to help themselves. It went down really well, it's my turn to host soon and a few people have asked if I can do that again. One of the guys is very obese, and is on a diet where he doesn't eat bread now. I don't really know him well enough to message him and ask about alternatives, and I'm worried that it might make him feel like catering to him is a faff. He's very self conscious, and if he thinks he's being an imposition he's likely to just cancel. I was thinking I could make the pulled pork stuff again, but add a bowl of potato wedges or hash browns, so he can join in without being singled out. Would this work?

tldr; do potato wedges or hash browns go with pulled pork?

If he's not eating bread, there's a good chance he's low carbing and not eating potatoes either.

He could just eat the pulled pork, if you do extra salad, corn on the cob etc he can have that with it and I doubt anyone would notice/comment that he wasn't eating carbs.

Potato wedges/Hash browns aren't really diet food and often not gluten free (if that's why he doesn't eat wraps) You can get gluten-free wraps and I think I saw weight watchers approved wraps at the supermarket too? Some baked potatoes might be good?

My son loves tortilla chips with pulled pork. Not sure how it compares to hash browns and chips in terms of calories?

Sounds like he's low carbing so just pulled pork and veggies will be fine. He can't even eat the apple sauce if he's low carbing.

Do you cook it in any kind of sauce? As there may be sugar in that which he can't have either.

I would just add salad and corn cobs with bread on the side if anyone wants it rather than it being pulled pork rolls and salad on the side. Does that make any sense?

You could provide big lettuce leaves to act as the bread.

Re low carbing, I'm not sure. We were at at the same BBQ a couple of weeks ago and he was eating a rice side dish, so he isn't no carbing although he might be low carbing. He has specifically said he's not eating bread though.

Maybe do a bowl of salad, plus the rest of the other stuff. Meat and salad should be ok for him. If not, his choice what he eats or doesn't eat.

I dislike bread and rice so if I was at your buffet I would happily just eat the pork, stuffing and sauce. As other people have said a green salad would be a lovely addition.

Thank you for the suggestions. I think I'll just turn in into make your own wraps or nachos, with salad and corn on the cobs on the side. I'll cook the pork with just spices and do a sauce separately in case that's a problem. It's more summery anyway!

I'd have thought that if he's not eating bread, he might not want wraps either. I thought your original suggestion of potato wedges was better (along with corn, salads etc).

Maybe make some coleslaw as well? The veg goes a long way when shredded and you doesn't take much dressing. It's a good contrast to pulled pork too. If there are a couple of vegetable/salad sides then it's easy to have a decent meal without filling up on carbs.

I don't really get why you can't just ask him? Surely he'd be grateful that you were being considerate?
