Summer meals,I need help so I can help my DH

I have looked and couldn't find any recent threads but thought we couldn't be the only one's struggling with what to eat surely?

The help for my DH bit is because I'm ill and disabled now so the lions share of everything (including feeding the 7 of us)really does fall to him.

The only meals I've managed to come up with are
a nice Ploughmans
Lamb koftas,hummus,pitta bread and golden veggie rice(we had that last night instead of a roast dinner)very simple but it was lovely.

Does anyone have any go to recipes that won't help make our kitchen feel as hot as hell?

blt pasta salad

chilli-lime salmon (i usually serve with salad)

healthy easy pizza

turkey stir fry

Mackerel salad. Buy pre cooked mackerel either pepper or plain and layer it over iceberg tomato olives cucumber etc. Drizzle with salad dressing. Maybe sprinkle some croutons on. Optional add on: hard boiled eggs.

Salad Nicoise is lovely and summery, tinned tuna, crisp lettuce, hardboiled eggs, cold new potatoes, cold green beans, tomatoes, anchovies and black olives if you like them, mayonnaise of course! With the potatoes it's quite a substantial filling dish. You could cook the potatoes, beans and eggs the night before when it's cooler.

Chicken Caesar salad is another easy one, especially if you can buy a ready cooked chicken.

I'm a fan of chilled soups such as gazpacho, which is easy to do, chopping and grating mainly, serve with crusty bread.

I like mackerel fillets too, and serve them on lettuce with a home made Waldorf salad, celery, apple, walnuts, black grapes, you can stretch the more expensive ingredients by mixing in a tub of coleslaw.

Cous-cous is useful as it's soaked rather than cooked, use it instead of rice, or buy pouches of rice to cook in the microwave rather than on the hob.
