Can I have your Gluten free lunch ideas please

Just found out that DD(12) has an intolerance to gluten so I need some ideas for her packed lunch.
She doesn’t like salad and isn’t keen on gluten free bread or pasta.
I’m a bit stuck so would appreciate your ideas.

Yes definitely. Didn’t your doctor do this when they investigated her gluten intolerance?? Shock Hmm

Don’t cut out gluten til it’s done. Undiagnosed coeliac disease can have significant health implications!

Gf crackers (nairns from aldi), cheese and biscuits. Pickle. Apple.

Gf pitta breads stuffed with sandwich fillings she likes

Rice salads and a gf dressing.

Others are salad ideas as i love salad!

@RainbowSparkles she absolutely MUST be checked for coeliac disease if this hasn't been done. DO NOT cut out gluten beforehand or the tests won't work. Undiagnosed coeliac disease can be dangerous and a proper diagnosis will enable you to access support with the special diet

Ok, I don’t know why she hasn’t been tested for coeliac.
I took her to the Dr’s for reoccurring mouth ulcers, the Dr then did various tests and the results were that she has an intolerance to gluten. I had no idea as she is generally well, rarely ill the only problem was the mouth ulcers.
I will enquire with the Dr, I have made a telephone appointment for tomorrow. I won’t cut the gluten until I’m fully clued up on everything.

Did the doctor do a blood test? If he did and it came back positive that would probably mean she has coeliac disease and it's a lot more work than an intolerance because cross contamination is a problem. It's weird to be told she's gluten intolerant but not coeliac disease. I don't know how gluten intolerance would be diagnosed by tests. (Except by an alternative practitioner but that's a whole other story.) As far as I understand, an intolerance would be diagnosed by diet, elimination and reintroduction with noting of symptoms, that kind of thing.

Mouth ulcers are a common enough symptom of coeliac disease.

She had blood tests to start with, then she was sent for allergy tests. No eliminations from her diet.
I have decided to speak with another Dr as I'm fairly certain there was no mention of Coeliac disease, I was in a bit of shock but would've heard him mention more tests and DD would've complained about more tests.
I will still ask the Dr tomorrow though just incase I did miss it.

Mouth ulcers are a classic symptom of coeliac disease. You need to get her tested. The initial test is a blood test, which shouldn't be too much of a problem at 12.

The trick, in my view, is to think outside the (lunch) box. Don't go looking for GF substitutes, but look to use foods that are naturally gluten-free. Forget about bread and pasta, and think about fruit and dairy and cooked meats.

GF breads are not all the same. I like the Genius seeded loaf and white rolls and I like Warburtons Sourdough toasted. I find most of the pasta good.

I agree that low carb recipes will give you lots of ideas.

I hope you get it sorted, OP. AFAIK there is no gluten allergy as such, so if it was an allergy it would be to wheat or barley or something like that, rather than gluten. It seems a bit weird. The blood tests might have shown up coeliac disease but it seems strange not to make that clear to you.

DS eats fruit and veg in his lunch. He has a big breakfast and something when he comes in from school so I don't worry too much about carbs at lunchtime. Rice cakes, crackers (Schar do a few different types), bread sticks. Occasionally I'll bake scones or something. The Schar bread rolls that somebody mentioned are ok. Fria and Jus Roll do pastry that's decent enough. We make mini pizza and mini quiches sometimes.

If she turns out to be able to tolerate gluten free oats there's an oat bread that's pretty simple to bake - roughly 500g oats, big pot of yoghurt I think 500mls, baking soda (can't remember if it's 1 or 2 teasp) mix together and bake.

Its really important to be properly diagnosed, and if coeliac it could be that others in your family have the condition. My mum, both brothers and myself have the conditions. It has a genetic component. Even if the symptoms are mild, if untreated it has long term health implications.

I’m GF and, having tried a few different breads, I really like Schar frozen white rolls (Asda do them and they’re just like normal rolls once baked) and Schar’s Wholesome Seeded Loaf. Bit hit and miss with the size of the air-holes but on the whole nice tasting! Also could try Corn Thins by Real Foods, I’m addicted to them with butter on and can do lots of toppings to go with them.

Just popping on as DS is gluten intolerant... do you mind me asking how they diagnosed an intolerance, OP? DS was tested (blood tests) for coeliac disease when he was about 14 months old and it came back negative but the paediatrician he was under refused to acknowledge a gluten intolerance and said it wasn’t a ‘thing.’
