Best meal in a microwave

crustycrab · 14/06/2019 01:06

Will be staying in a hotel soon for quite a while. It will have a fridge, kettle and a microwave.

We are trying to keep costs down so I'm looking for inspiration for breakfasts and evening meals that I can cook in a microwave.

Not ready meals if we can help it !

2 adults, 2 kids.
Thanks

With the kettle, you could make up a packet of couscous which is ready in less than 15 minutes. Just soak in boiled water. Most supermarkets sell Mediterranean flavour www.tesco.com/groceries/en-GB/products/253748557 which is delicious with crumbled feta cheese, chopped red peppers, cucumber and cherry tomatoes.

Heinz creationz lentil curry (can be microwaved, doesn’t need a job) with microwave rice www.tesco.com/groceries/en-GB/products/301925091 - eaten one handed with a fork!

Tinned taco beans in a spicy sauce www.tesco.com/groceries/en-GB/products/259061910 with heated taco shells or heated tortilla wraps, sour cream, grated cheese, salad and salsa.

Chicken couscous salad www.bbcgoodfood.com/recipes/1706/nocook-chicken-couscous Substitute the frozen peas with tinned sweetcorn.

I’ve used this recipe for spinach and tomato gnocchi a few times microwavecookingquickandeasy.blogspot.com/2011/07/gnocchi-with-spinach-tomato-and-pine.html

@Ricekrispie22 has some great ideas. I was just going to say scrambled eggs or heat up soup.

Also can you pre-cook and freeze a few things (curry, stew etc) that will gradually defrost and you can heat them with packet rice etc -- a tip from camping is that if you have a good enough cool bag and don't open it - everything stays much colder for longer. So it might take 3 days to defrost.

Some ready meals can be OK. There's a few in M&S with lots of fresh veg in that are actually quite nice.

If there's one local to the hotel and you are free in the early evening you could hit the reductions and get them much cheaper than full price.

Another option would be using a slow cooker if you have access to one, but obviously with limited washing up facilities, you'd have to keep a careful eye on how many utensils etc you use.

Morrisons cafe do a teatime meal deal that's £10 for a family of 4 so that might make a nice change if there's one nearby.

Great, thanks for all the ideas. I could only think of scrambled eggs and jacket potatoes! Lots more ideas now

When we had similar I'd get a "main" from the nearby supermarket hot food counter (some sort of meat, pizza) and then make a salad or cous cous to go with it.

And porridge can be microwaved for breakfast - normal oats, top up with milk or water to double level of oats, in for 2 minutes or so.

You can cook all sorts in the microwave! Even meat! And fish, but that can make it a bit wiffy.

There's some great ideas here: greatist.com/health/surprising-healthy-microwave-recipes#Lunch-and-Dinner
