Whar are your favourite low cost and quick meals?!

Since having my little one (16 months) I find our shopping bill has increased dramatically through a combination of lack time to plan meals and lack of time to prepare meals. Please hit me with your cheap AND quick meals!!

stovies ( not mentioned in recipe but i sprinkle cheese over the top when all cooked and brown in grill)

Do you eat meat? Tray bakes are quick and easy - chicken legs or thighs, quartered potatoes, a load of onions, peppers, carrots, garlic cloves, lemon wedges etc. Season well, sprinkle with oregano and paprika and roast for 45 minutes at 200c. Works well with pork chops too Smile

Yes sorry forgot to say, we are meat eaters maybe a bit too much! My partner eats like a horse so would be great to find some super filling veggie meals aswell

We also do tray bakes often ,either with chicken thighs or meatballs.
With a few different seasonings & changing vegetables you can make a few different meals .

Hairy dieters pan haggerty. Is just potatoes, onions, stock, carrots and bacon with some cheese on top. Delicious and dead cheap!

Back as a post-doc, I used to eat tater tots (maybe croquettes in the UK?), with some pico de gallo, seasoned mince, a squeeze of salsa verde, a sprinkle of mexican cheese. Pretty toddler friendly if you replace the salsa verde with sour cream?

I'd also eat potato latkes with a poached egg and some guacamole; shakshuka with feta cheese and aubergine to bulk it; cacio e pepe with garlic bread. I used to spend about $30 a week on food. I'd also make a ton of cabbage and pork dumplings with sauce - very, very cheap to do.

I find omelettes quick and cheap, bonus if I have leftover spuds and can make a Spanish omelette.
