What can I cook with the following?

New potatoes
Aubergine
Cucumber
Tomatoes
Carrots
Broccoli
Feta
Onions

Fairly well stocked cupboards and some bits in the freezer.

Ds2 is not fussy but he’s 8 and likes simple food. I cook a lot but I’m really lacking inspiration and motivation at the moment.

Watching for ideas as I have pretty much the same selection of veg that needs using up except a courgette instead of an aubergine and just about every other cheese there is except feta.

I would roast aubergine, carrot, toms, and then serve with feta and carrot sticks

Great ideas, I never think about cous cous and roasted veg! I think I have enough for that and a frittata for lunch tomorrow 😊

Exactly what I would do. If have it with either cous cous or a crusty loaf. Sounds lovely.

Carrot soup (Potage Crecy) with carrot & some onion.
Pasta Siciliana with aubergine tomatoes and a little onion.
Potato, broccoli and cheese bake, (add pasta if you have some).

Any left over potatoes, tomatoes, feta, onions and the cucumber make into a Greek style salad, add olives and tuna if you have them, to make it all go further.

Fry onions, aubergine and tomatoes. Add herbs. Spoon over pasta, crumble over some feta cheese.

Roasted carrots and broccoli (plenty of seasoning) are also a delicious side dish.

Got any tinned tomatoes or Passata and herbs and any mince? Could make a Moussa style dish and crumble feta on top.

Yep was going to suggest the same -

Roast veg (keep half the tomato) and onion with olive oil, garlic and herbs. Mix into couscous.

Feta, cucumber and tomato salad with olive oil and lemon (if you have any). Either straight on top of veg couscous, or on the side.

Or you could roast the aubergine (halve it and season and drizzle olive oil over) and broccoli, make pasta and pasta sauce as usual and mix together. When it’s ready scoop aubergine out of the skins and add to pasta/sauce. Broccoli on the side, with lemon squeezed over. Again, tomato cucumber and feta salad on the side.

Or fry off aubergine in fairly big chunks with plenty of herbs, add ingredients to make up tomato sauce, cook until aubergine is ready. Mix in some rice and top with feta.

Or a big frittata-style dish.

Or if you have pitta breads or wraps, even better. If you have yogurt you can make a great cucumber garlic and feta dip. Drizzle oil onto pittas, or wrapped, sprinkle with salt and chilli flakes and stick it into the oven on 180 until the bread is good and crunchy. Cut into strips and enjoy alongside any other dinner dish you decide on with the rest of your ingredients.

Chop them all up. Mix with oil. . Oven 200 c, roast 30 mins . Serve . Simples.
