Do you meal plan? What are you eating this week?

I’ve never really managed to get into the swing of it.

I have two super-fussy children. My rules are that you eat what you’re given or you go hungry, but obviously my ideal meal would be one that we could all enjoy!

If they had their way it would be pasta pesto with cheese and crudités every night.

Tried a frittata last week. Delicious! They had one nibble each Sad

I was one of those kids who ate everything so I’m at a bit of a loss. What are you eating this week?

I plan with a paper and pen, too. I write the meal plan at the same time as I write the weekly "main shop" shopping list. The order in which we eat the stuff depends on use by dates and how fresh the veg look, mostly.

I don't tend to plan for seven proper meals, usually five per week, as there's invariably evenings when we're just not in the mood for anything. These are the evenings for cupboard meals, if we do want something, or the rare meal out or a take away, or nothing.

Normally have roast on Sunday with trimmings or with a "serious" salad in the summer and/or cous cous salad
Mon = cold cuts and veg/salad (but tonight it's Lorraine Pascale's chilli which I made yesterday).
Tues= vegetarian pasta or stew
Wed = one dish traybake of sausages/chicken pieces/ salmon or tuna with roasted veggies
Thurs = veggie again such as bean burgers. veg burgers, lentil "shephed's" pie, hearty soup, vegetable risotto etc (make soup for weekend lunches while chipping veg)
Fri = always fish : pie, goujons, en papillotte etc
Sat: take away or Hairy Biker fake away

Today - Fishcakes and potato wedges, I'll probably make a simple salad as well
Tues - Cajun chicken and rice
Weds - Spicy bacon and tomato pasta with garlic bread or salad
Thurs - Salmon with noodles and stir fry veg
Fri - Pizza
Sat - BBQ at my Sister's house
Sun - Roast pork

@SpaceCadet4000 can you share your fish taco recipe please? Sounds like something we'd all like

SpaceCadet4000 · 28/05/2019 00:55

Gotto- totally! There's a lazy version and a healthy version.

Lazy version: frozen battered cod. Healthier version: either pan-fried shrimp or a white fish, cooked with salt, pepper, garlic and squeezed with lime and garnished with chopped coriander at the end.

For the tacos, I use the soft ones, ideally corn, and pan fry each one to make it a little crispy. You can skip that and just heat a stack in the oven for 2 mins for speed. For other fillings, I do shredded lettuce, a pico de gallo salsa, guacamole, sliced radishes and jalapenos.

As a sauce, I mix mayo, Cholula sauce and lime juice. About half the volume of hot sauce to mayo, but adjust to taste. It sounds weird, but it's delicious!

Brilliant! I like the sound of both of those dishes.
Thank you
