What do you for lunch during the school holidays? Especially if your children have hot lunch at school

I need ideas. DD only has one week left of term and then I need to feed her lunch every day and she does not like my usual lunches (salad or roast tomatoes). She has a hot lunch at school so is used to a pretty solid meal. At weekends she usually just has some toast and snacks but that's not really ideal for every day. I want to have a different lunch each day of the week and then just repeat each week.

Bonus question - what do 8 year olds learn in history in the UK? I can't imagine DD growing up without learning about the Tudors etc. which of course isn't going to be taught in her Finnish school so I want to do a little bit of 'summer school' during the holidays, just some practice of her reading and writing in English and some history (got Horrible Histories dvds to watch as well) after breakfast before she has the rest of the day free. Any good resources for this?

During half terms my mum used to take me to the supermarket and let me pick out a different tin for each lunch, so one of beans and sausage, one mac and cheese, one bolognese etc.

I discussed it with her recently, saying what a great treat it was. She laughed because she did it out of laziness not as a treat!

Another suggestion would be jacket potatoes.
Also I often make extra for dinner and then some or all of it is lunch the next day.
(I home educate so need to figure lunches all year round.)
