Low-carb, coeliac and vegetarian? What do you eat?

All I can think of is variations on eggs Confused. I'm currently doing the Tesco online shop and require urgent inspiration, so of you fall into the centre of this particular Venn diagram, please tell me what you actually eat!

(Bonus points for anything that can also be enjoyed by a dairy-intolerant, deeply carnivorous DH and the two fussiest children on the planet.)

Have a look on mark’s daily apple- he does a variation on keto which is low carb and no gluten, minimal dairy. He does have some info on how to follow as a veggie and there’s also a recipe search on the website

I’m not sure if these will be low carb enough for you:
Sweet potato and peanut red Thai curry
Chilli- aubergine, courgette, bell peppers, black beans and kidney beans
Tofu stir fry
Cauliflower base pizzas
Many soups!
Stuffed peppers (use quinoa)
Lentil bolognese and courgetti
Halloumi and vegetable kebab sticks
Halloumi and falafel salad
Quern mince bolognese
Quorn mince cottage pie with sweet potato top
Cranks nut roast
Enjoy!

Cauliflower rice is a useful rice/potato/carb substitute. The kids will need carbs so perhaps serve the kids with wraps or pita or potatoes or rice on the side.

Quinoa is your friend.

Most of the Quorn products are now gluten free and some are low carb - Quorn pieces, steak strips, peppered steaks and the mince are all ok.

This small chain of vegetarian restaurants I like always have interesting menus - have a look and see if there’s anything you could make or adapt slightly. They’re really good at not just using rice / pasta / couscous to bulk things out but focusing on proper ingredients: thegaterestaurants.com

I eat quite a lot of silken tofu in stir fries, soups and stews. It’s very versatile.

I try to use cauliflower or broccoli rice with curries/stews, or I serve mine on a bed of greens. Courgetti or carrots spuralised can be good too.

Deliciously Ella is a good source of veggie gf meals, but I always swap the brown rice for one of the above.

I'm not sure quinoa is low carb at all, I've had to low carb on doctors orders and was told to avoid it

Stir fry, veggie chilli, veggie jalfrezi, tofu fajitas (gf wraps or ‘naked’ fajitas for you)
