Come and critique my lunch

I’m looking for a bit of guidance on my diet at the moment. I’m struggling massively with the inevitable weight gain of an under active thyroid and although taking thyroxine i feel like I’m not getting anywhere and wonder whether my idea of healthy eating is skewed.
For reference I’m not huge, a size 10 when I’ve always been a 6-8 but feel what I eat and how much I exercise are just making me gain weight and not losing anything.
I do a body pump class 3-4 times a week as I used to do a lot of cardio based classes and a friend told me this was pointless for weight loss and I should be doing weights instead.
For breakfast I have 3 scrambled eggs with no added butter or oil or anything. Then lunch is as the photo (tuna, cous cous and roasted veg). In my mind this is pretty healthy but is it actually?? And is this portion actually much bigger than it should be?
Then dinner is usually something like fishcakes and kale or stir fry etc. pretty normal dinners. And I never ever snack.
So is it just my thyroid to blame or am I going wrong somewhere?

Oh and this would be lunch with balsamic vinegar drizzled on top, no other dressings or mayonnaise.

I think it all sounds fine. Totally appreciate your struggle as I was the exact same. I’ve recently requested to up my dosage by 50mg and doctor agreed even though I was within the Normal range. It’s made a world of difference, I’m sticking to my 1500 calories a day and I’m finally losing 1-2lb a week.

I drink at least 3 litres of water a day and other than that 2 cups of green tea. Zero fizzy drinks or anything like that.

I think I feel full most of the time, I’m not starving come dinner time which is why I’ve tried to keep it quite protein heavy as I worry about the inevitable snacking/eating crap if I’m hungry

That’s interesting @glasshalfsomething I’m already on 50mg but do notice what my blood tests show don’t actually reflect how I’m feeling so worth maybe upping slightly

That looks like a healthy lunch. You could maybe swap the cous cous for quinoa?

I'd say the portions are fine for you exercising more than half the week, I would keep an eye on your protein and carbs on days you are not exercising, but other than that looks good.
I am not a dietitian tho

Looks great to me, very balanced and healthy. Overall your diet seems fantastic, all the right things in moderation. I would look at changing your thyroid meds, as your exercise routine is good too. Adding a walk or a run perhaps? Weights are also worth looking in to.
