Could I have your favourite recipes for beans and lentils please?

I'm trying to eat more vegetarian and vegan meals and I have at least 20 cans of various types of beans, chickpeas and lentils, and a few dried bags of red lentils. Ive bought too many when they were on offer and I don't know what to do with them.

Any ideas/recipes would be much appreciated. TIA

Turn black beans into refried beans, cumin-y garlicky deliciousness in burritos/tacos etc

I make a tomato stew with beans (any beans, or a mix of cooked beans, butter beans work particularly well) and then top the hot stew with a mixture of:
Crumbled feta
Crushed tortilla chips
Cubed avocado
Lime juice
Coriander
Capers (if you have them)

I can post the stew recipe if you like but you're feeling really lazy, instead of making the stew you can simmer a tin of tomato soup with a tin of butter beans, then top with the above mixture.

James martins Tuscan bean stew.

Easy Mexican chickpeas... old El Paso smoky mix, one sliced onion, one diced pepper, 1 tin chickpeas and 1tin tomatoes. Simmer for 1hr!

Crispy chickpeas as a snack.

Oh and also - chickpeas and chorizo (see attached recipe, only uses a very small bit of chorizo to flavour) and also black beans and sausage, same kind of thing, the sausage is for flavour and the beans are the main part of the dish: www.marthastewart.com/331726/black-beans-and-sausage

I make cottage pie much the way Mary Berry recipe up thread on Irwe post

But I mash the potatoes with vegetable stock instead of milk and butter, I find this more flavoursome- but it also makes the dish vegan

I find it really annoying that so many veggie recipes rely on tinned tomatoes- I hate them!

I make a lovely Dahl with red lentils and coconut milk. Can dig out recipe if anybody wants it.

Gigantis with butter beans. I fry onion, diagonally sliced carrots, garlic on a low heat to soften. Add dried mint and oregano. Add halved cherry tomatoes and 2 tins beans, bit of water, drizzle with more olive oil and bake for aaaaaages.

Chickpeas- use to make a quick curry with onions, spices and a couple of finely chopped fresh tomatoes and finish with a dollop of yoghurt to make it a bit saucy. Nice with a naan bread for a quick and lazy tea.

Remus. I'd love to have your Dahl recipe too please if possible. I have several tins of coconut milk in my cupboard too.

This is the best chilli recipe ever. I like it much more than meat chilli. Don’t skimp on the coriander.

The Worker's Curry recipe is lovely, I'm poor at following a recipe but it's fab.

I want to do the same & have bought large bags of beans so this is very helpful.

Kosheri is a brilliant standby. I use the Ottolengi recipe (cheating with tinned lentils and ready fried onions). This is a variant.

Nigella has a good lentil chilli recipe too although I think her recipes always need extra spices adding.

My Dahl -

Finely chop an onion and a couple of cloves of garlic and fry until softening but not coloured. Add a chopped chilli, some ginger, a teaspoon cumin seeds, a teaspoon turmeric, a teaspoon mustard seeds and red lentils, a load of chopped coriander (I save stuff just about to die, chopped up in a pot in freezer for this) plus water. Cook until nearly soft (you may need to add more water). Add coconut cream and salt and pepper.

Meanwhile, slice another onion into fine half moons and another couple of cloves of garlic into slices. Fry until coloured then add mustard seeds, cumin seeds and red chilli flakes until popping. Pour this over the top of the lentils (beat the lentils with a wooden spoon a bit first). Shove lots more fresh coriander over to finish.
