Has anyone made an ice cream cake before?

It's DDs 8th birthday next month and she's just not a fan of cake, she'll have one slice, pick off the icing and crumble up the sponge. So this year I thought it might be nice to try something different. She loves ice cream so I thought an ice cream cake would be perfect! I suggested it to her and she thinks it's a great idea too.

I found this recipe which looks amazing! But does anyone know what I could use for the 'frozen whipped topping'? It's an American recipe so I don't know if anything like that exists over here or what would work as an alternative! Can anyone help please?

Sorry, posted too quick. Cheese cake? made with different cheeses? You could use squirty cream, then flatten it down, then freeze the cake. or how about making her a sundae with sprinkles and a sparkler pushed in to it?

Whipped topping (I think) is just whipped cream with a bit of vanilla added to it.

If you're doing a chocolate cake what about some well whipped cream mixed with some melted milk chocolate as a topping?

That looks delicious; we had ice cream cakes from a shop years ago as a birthday treat, but they didn't look that good! I found this as a substitute for whipped topping. Or this. I am prepared to offer my services as a taster...

They look great too @Knittedfairies you're more than welcome to join me for taste testing as I think I'm going to have to do a few practice runs before the actual cake is made!
